Creamy Pour-Over Baked Potatoes: A Comforting Oven Classic

If you’re looking for a dish that’s simple yet incredibly satisfying, creamy pour-over baked potatoes are the perfect choice. This recipe transforms humble potatoes into a rich, velvety side (or even main dish) by baking them slowly under a luscious, seasoned cream sauce. The result? Tender potatoes infused with flavor and topped with a golden, slightly crisp finish.

Let’s walk through everything step by step so you can make it perfectly at home.

🥔 Ingredients You’ll Need

  • 6–8 medium potatoes (Yukon Gold or Russet work best)
  • 2 cups heavy cream (or half-and-half for a lighter version)
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tablespoons butter
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • Salt and black pepper (to taste)
  • 1 teaspoon paprika (optional)
  • Fresh herbs like parsley or thyme (optional, for garnish)

🔪 Step 1: Prepare the Potatoes

Start by washing and peeling your potatoes. Slice them into thin, even rounds—about 3–5 mm thick. Keeping them uniform helps them cook evenly and absorb the creamy sauce better.

Place the slices in a bowl of cold water briefly to remove excess starch, then drain and pat them dry.

🧄 Step 2: Make the Creamy Sauce

In a pan over medium heat:

  1. Melt the butter.
  2. Add the chopped onion and sauté until soft and slightly golden.
  3. Stir in the minced garlic and cook for about 30 seconds until fragrant.
  4. Pour in the cream and stir gently.
  5. Season with salt, pepper, and paprika.

Let the mixture warm through (don’t let it boil), then remove from heat.

🥘 Step 3: Layer the Potatoes

Preheat your oven to 180°C (350°F).

Grease a baking dish lightly with butter or oil. Then:

  1. Arrange a layer of potato slices on the bottom.
  2. Pour a portion of the cream mixture over the layer.
  3. Sprinkle a little cheese.
  4. Repeat the layers until all potatoes and sauce are used.

Finish with a generous layer of cheese on top.
