There’s something timeless about a warm casserole coming out of the oven—especially one loaded with seasoned ground beef, tender rice, and melted cheese. This Cheesy Ground Beef and Rice Casserole is the kind of dish that’s perfect for busy weeknights, meal prep, or feeding a crowd without spending too much. It combines simple pantry ingredients into a rich, satisfying meal that feels like home.

🧀 Ingredients

Here’s what you’ll need:

  • 500g ground beef
  • 1 cup uncooked white rice
  • 2 cups beef broth
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (about 400g) diced tomatoes (with juice)
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • ½ cup milk or cream
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 tablespoon olive oil or butter

🍳 Step-by-Step Method

1. Prepare Your Base

Start by preheating your oven to 180°C (350°F). Lightly grease a medium-sized casserole dish to prevent sticking.

In a large pan over medium heat, add the olive oil or butter. Once heated, sauté the chopped onion for about 2–3 minutes until soft and translucent. Add the minced garlic and cook for another 30 seconds until fragrant.

2. Cook the Ground Beef

Add the ground beef to the pan. Break it apart with a spoon and cook until browned and no longer pink. Drain any excess fat if needed—this keeps the casserole from becoming too greasy.

Season the beef with salt, black pepper, paprika, and oregano. Stir well so the spices coat the meat evenly.

3. Build the Flavor

Add the tomato paste and mix it into the beef. Then pour in the diced tomatoes (with their juice), followed by the beef broth. Stir everything together and bring it to a gentle simmer.
