Ingredients
For the Meatballs
- 1 pound ground beef
- ½ pound ground pork (optional for extra flavor)
- 1 egg
- ½ cup breadcrumbs
- ¼ cup grated Parmesan cheese
- 2 garlic cloves, minced
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
For the Stew
- 4 medium potatoes, peeled and diced
- 3 carrots, sliced
- 1 onion, chopped
- 2 celery stalks, sliced
- 4 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon paprika
- ½ teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons cornstarch (optional, for thickening)
- 2 tablespoons water
- Fresh parsley for garnish
Step 1: Prepare the Meatball Mixture
In a large mixing bowl, combine the ground beef, ground pork, egg, breadcrumbs, Parmesan cheese, garlic, onion powder, Italian seasoning, salt, and black pepper.
Mix gently with your hands or a spoon until everything is evenly combined. Avoid overmixing because it can make the meatballs dense and tough.
Once mixed, shape the meat into small meatballs about one inch in size. Smaller meatballs cook evenly and absorb more flavor from the stew.
Step 2: Brown the Meatballs
Although this step is optional, browning the meatballs first adds a deeper flavor and helps them hold their shape during slow cooking.
Heat a skillet over medium heat with a small amount of oil. Add the meatballs in batches and cook for 2–3 minutes per side until lightly browned. They do not need to cook completely at this stage.
Transfer the browned meatballs to a plate while preparing the stew ingredients.
