Mini Meatloaf Muffins

No photo description available.

Mini Meatloaf Muffins are a fun, portion-controlled twist on classic meatloaf. Instead of baking a single large loaf, the mixture is divided into muffin tins, creating individual servings that cook faster, stay juicy, and are perfect for meal prep, kids’ lunches, or quick weeknight dinners. They also freeze well, making them a practical “make once, eat twice” recipe.

Below is a clear step-by-step guide to making them from scratch.

Ingredients You’ll Need

The base of Mini Meatloaf Muffins is similar to traditional meatloaf, usually built around ground meat, binders, seasoning, and a flavorful glaze.

  • Ground beef or a mix of ground beef and ground pork
  • Breadcrumbs
  • Eggs
  • Onion (finely chopped)
  • Garlic (minced)
  • Milk
  • Salt and pepper
  • Worcestershire sauce
  • Ketchup or BBQ sauce (for flavor inside and topping)

Optional additions:

  • Grated carrot or zucchini for moisture and hidden veggies
  • Italian seasoning or smoked paprika for deeper flavor
  • Shredded cheese for a richer texture

Step 1: Prepare Your Oven and Muffin Pan

Preheat your oven to 375°F (190°C). Lightly grease a standard 12-cup muffin tin or line it with paper liners for easier cleanup.

This step is important because mini meatloaves cook quickly, and starting with a properly heated oven ensures even cooking and a nicely browned top.

Step 2: Soften and Build Flavor Base

In a small pan (optional but recommended), sauté your chopped onion and garlic for 2–3 minutes until fragrant and slightly softened. This removes the sharp bite of raw onion and enhances sweetness in the final dish.

Let it cool slightly before mixing with the meat so it doesn’t start cooking the eggs early.

Step 3: Mix the Meatloaf Base

In a large bowl, combine:

  • Ground meat
  • Breadcrumbs
  • Eggs
  • Milk
  • Cooked onion and garlic
  • Worcestershire sauce
  • Salt and pepper

Use your hands or a spoon to gently mix everything together.

Important tip: Do not overmix. Overworking the meat will make the muffins dense and tough. You want everything just combined, with a slightly loose texture.

At this stage, you can also add optional vegetables or cheese if you want extra flavor or moisture.
