
Classic Macaroni Salad: A Creamy, Flavorful Side Dish for Every Occasion
Classic macaroni salad is a timeless favorite that has earned its place at family gatherings, summer barbecues, picnics, potlucks, and holiday celebrations. Loved for its creamy texture, tender pasta, crisp vegetables, and perfectly balanced dressing, this comforting dish is both simple to prepare and incredibly satisfying. Ingredients
For the Salad
- 2 cups elbow macaroni
- 1 cup celery, finely diced
- ½ cup red bell pepper, diced
- ½ cup carrot, grated
- ¼ cup red onion, finely chopped
- 3 hard-boiled eggs, chopped
- ¼ cup sweet pickle relish
- 2 tablespoons fresh parsley, chopped
For the Dressing
- 1 cup mayonnaise
- 1 tablespoon yellow mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon granulated sugar
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt, to taste
- Freshly ground black pepper, to taste
Step 1: Cook the Macaroni
Bring a large pot of generously salted water to a rolling boil. Add the elbow macaroni and cook according to the package instructions until just al dente. The pasta should be tender but still slightly firm, as it will continue to soften slightly while absorbing the dressing.
Avoid overcooking the pasta because overly soft macaroni can become mushy once mixed with the creamy dressing.
Step 2: Cool the Pasta
Drain the cooked macaroni immediately in a colander. Rinse it under cold running water until completely cooled. This stops the cooking process, removes excess starch, and prevents the pasta from sticking together.
Allow the macaroni to drain thoroughly so excess water doesn’t dilute the dressing.
Step 3: Prepare the Vegetables
While the pasta cools, wash and prepare all the vegetables.
Dice the celery into small pieces for crunch, finely chop the red onion, dice the red bell pepper, grate the carrot, chop the parsley, and roughly chop the hard-boiled eggs.
Keeping the vegetables similar in size ensures every bite has a balanced combination of ingredients.
