Cranberry Chicken Pasta Salad: A Fresh, Creamy, and Flavorful Recipe
Cranberry Chicken Pasta Salad is a colorful and satisfying dish made with tender pasta, cooked chicken, dried cranberries, crunchy vegetables, and a creamy dressing. It has the perfect balance of savory, sweet, creamy, and fresh flavors. The chicken makes it filling, the cranberries add a pleasant fruity sweetness, and the pasta brings everything together into one hearty salad.
This recipe is excellent for lunch, picnics, potlucks, family gatherings, meal prep, or a light dinner. It can be served cold, which makes it especially convenient because you can prepare it ahead of time and keep it in the refrigerator until ready to serve.
Why Cranberry Chicken Pasta Salad Is So Good
The beauty of this salad is its balance of textures and flavors. The pasta is soft and tender, the chicken is savory and filling, the cranberries are chewy and sweet, and the vegetables add freshness and crunch. A creamy dressing ties everything together without making the salad too heavy.
It is also easy to customize. You can make it with rotisserie chicken, grilled chicken, leftover roasted chicken, or even poached chicken breast. You can also add nuts, cheese, apples, celery, or green onions depending on your taste.
Ingredients
For the Salad
- 3 cups cooked pasta, such as bowtie, rotini, penne, or macaroni
- 2 cups cooked chicken, diced or shredded
- ¾ cup dried cranberries
- ½ cup celery, finely chopped
- ½ cup red onion, finely diced
- ½ cup carrots, shredded or finely chopped
- ½ cup chopped pecans, walnuts, or almonds, optional
- ½ cup shredded cheddar cheese or crumbled feta, optional
- 2 tablespoons fresh parsley, chopped
For the Creamy Dressing
- ½ cup mayonnaise
- ¼ cup Greek yogurt or sour cream
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar or lemon juice
- ½ teaspoon garlic powder
- ½ teaspoon salt, or to taste
- ¼ teaspoon black pepper
- 1 tablespoon olive oil, optional for a smoother dressing
Step 1: Cook the Pasta
Bring a large pot of salted water to a boil. Add the pasta and cook it according to the package instructions until it is al dente. The pasta should be tender but still slightly firm, because very soft pasta can break apart when mixed with the dressing.
Once cooked, drain the pasta and rinse it under cold water. Rinsing stops the cooking process and cools the pasta quickly, which is important for a cold pasta salad.
Let the pasta drain well. Too much water can thin the dressing and make the salad watery.
Step 2: Prepare the Chicken
Use cooked chicken for this recipe. You can grill, roast, boil, or use store-bought rotisserie chicken.
If using chicken breast, season it with salt, pepper, and garlic powder, then cook until fully done. Let it cool before cutting it into small cubes or shredding it.
The chicken should be bite-sized so it mixes evenly with the pasta and other ingredients.
