For the Chicken

For the Cranberry Sauce

  • ¼ cup orange juice
  • 2 tablespoons honey or brown sugar
  • 2 tablespoons balsamic vinegar or apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary, optional
  • ¼ teaspoon red pepper flakes, optional

For Thickening the Sauce

  • 1 tablespoon cornstarch
  • 2 tablespoons cold water

For Garnish

  • Fresh parsley
  • Fresh rosemary
  • Orange zest
  • Extra cranberries, optional

Step 1: Choose the Right Chicken

You can use chicken breasts or chicken thighs for this recipe. Chicken breasts are leaner and slice nicely, while chicken thighs stay extra juicy and tender during slow cooking.

If the chicken pieces are very large, cut them into smaller portions so they cook evenly. Pat the chicken dry with paper towels before seasoning. This helps the spices stick better.

Step 2: Season the Chicken

Place the chicken on a plate or cutting board.

Season both sides with salt, black pepper, garlic powder, onion powder, and paprika.

The seasoning may seem simple, but it helps balance the sweetness of the cranberry sauce. The paprika also adds a warm color and mild smoky flavor.

Step 3: Optional Searing for Extra Flavor

This step is optional, but it makes the dish taste richer.

Heat olive oil in a skillet over medium-high heat. Add the chicken and sear for 2 to 3 minutes on each side until lightly golden.

You do not need to cook the chicken fully at this stage. The goal is only to brown the outside. Browning adds deeper flavor and helps the final dish taste more savory.

After searing, transfer the chicken to the slow cooker.
