  • 2 tablespoons fresh parsley, chopped, optional

For the Creamy Dressing

  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tablespoon apple cider vinegar or lemon juice
  • 1 tablespoon sugar, optional
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder

Step 1: Thaw the Peas

Start with frozen peas. They are best for this salad because they are sweet, bright green, and already cooked before freezing.

Place the peas in a colander and rinse them under cold water until they are thawed. Drain them very well.

Do not boil the peas. Cooking them again can make them too soft and dull in color. The goal is to keep them firm, fresh, and slightly crisp.

After draining, pat them dry with paper towels. Too much water can make the dressing thin.

Step 2: Cook the Bacon

Place the bacon in a skillet over medium heat.

Cook until it becomes crispy and golden. Turn the slices as needed so they cook evenly.

Transfer the cooked bacon to a paper towel-lined plate and let it cool. Once cooled, chop it into small pieces.

Crispy bacon works best because it adds texture. If the bacon is too soft, it may become chewy once mixed into the creamy dressing.
