- 1 small onion, finely chopped

- 1 cup chicken broth
- 1 tablespoon Dijon mustard, optional
- 1 tablespoon Worcestershire sauce
- ½ teaspoon dried thyme
- ½ teaspoon dried parsley
- 4 oz cream cheese, softened
- ½ cup heavy cream or half-and-half
- ½ cup sour cream, optional for extra tang
- 1 tablespoon cornstarch mixed with 2 tablespoons water, for thickening

Step 1: Prepare the Pork Tenderloin
Start by patting the pork tenderloin dry with paper towels. This helps the seasoning stick better and gives the meat a better texture.
Trim away any silver skin or excess fat. Silver skin is the thin, shiny membrane on the surface of the pork. It can become tough after cooking, so removing it makes the meat more tender.
Season the pork on all sides with salt, black pepper, garlic powder, onion powder, paprika, and Italian seasoning.
Let the pork sit for about 10 minutes while you prepare the skillet and sauce ingredients.
Step 2: Sear the Pork for Extra Flavor
Heat olive oil or butter in a skillet over medium-high heat.
Place the seasoned pork tenderloin in the hot skillet and sear it for 2 to 3 minutes per side. You are not cooking it fully at this stage. The goal is only to brown the outside.

Pour in the chicken broth and scrape the bottom of the skillet to loosen any browned bits from the pork. These bits add a lot of flavor to the sauce.
