  • 1 teaspoon lemon zest, optional

For the Topping

  • 2 tablespoons chopped pistachios
  • 2 tablespoons shredded cheese
  • A small pinch of herbs
  • 1 teaspoon olive oil or melted butter

Step 1: Prepare the Loaf Pan

Preheat your oven to 350°F / 175°C.

Grease a 9×5 inch loaf pan with butter or oil. Line it with parchment paper, leaving a little paper hanging over the sides. This will make it easier to lift the loaf out after baking.

A well-prepared pan is important because cheese can sometimes stick to the edges while baking.

Step 2: Prepare the Pistachios and Herbs

Roughly chop the pistachios. Do not crush them too finely because larger pieces give the loaf better texture.
