Kielbasa & Pierogi Casserole: A Creamy, Cheesy Comfort Food Dinner

Kielbasa & Pierogi Casserole is a hearty, comforting dish made with smoky sausage, tender pierogi, creamy sauce, caramelized onions, and melted cheese. It brings together the flavors of a classic pierogi dinner but turns them into an easy baked casserole that is perfect for busy weeknights, family meals, potlucks, or cold-weather comfort food.

The best thing about this recipe is that it uses simple ingredients but creates a rich and satisfying meal. Frozen pierogi make the dish quick and convenient, while kielbasa adds a smoky, savory flavor. When everything bakes together with a creamy cheese sauce, the pierogi become soft, the sausage becomes golden, and the top turns bubbly and delicious.

Ingredients

Main Ingredients

  • 1 package frozen pierogi, about 16 oz
  • 1 pound kielbasa sausage, sliced into rounds
  • 1 medium onion, thinly sliced
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup sour cream
  • ½ cup cream cheese, softened
  • ½ cup chicken broth or milk
  • 1 ½ cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese, optional
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt to taste
  • 2 tablespoons chopped parsley or green onions for garnish

Optional Add-Ins

  • Cooked bacon pieces
  • Sautéed mushrooms
  • Sauerkraut
  • Steamed broccoli
  • Peas
  • Caramelized cabbage
  • Red pepper flakes for heat

Step 1: Prepare the Baking Dish

Preheat your oven to 375°F / 190°C.

Lightly grease a 9×13 inch baking dish with butter or cooking spray. This helps prevent the pierogi from sticking and makes cleanup easier.

Set the dish aside while you prepare the sausage, onions, and sauce.

Step 2: Slice and Brown the Kielbasa

Cut the kielbasa into round slices, about ¼ inch thick.

Place a large skillet over medium heat. Add the sliced kielbasa and cook for 4 to 6 minutes, stirring occasionally, until the edges become lightly browned.

Browning the kielbasa first gives the casserole deeper flavor. The sausage becomes slightly crisp on the outside while staying juicy inside.

Once browned, remove the kielbasa from the skillet and place it on a plate.

Step 3: Cook the Onions

In the same skillet, add the butter.

Once melted, add the sliced onion. Cook over medium heat for 6 to 8 minutes, stirring often, until the onion becomes soft and golden.

Add the minced garlic and cook for another 30 seconds.

The onions add sweetness and balance the smoky sausage. Cooking them in the same pan also picks up the flavor left behind from the kielbasa.

Step 4: Prepare the Creamy Sauce

In a mixing bowl, combine the sour cream, softened cream cheese, chicken broth or milk, garlic powder, paprika, black pepper, and a small pinch of salt.

Whisk until the mixture becomes smooth and creamy.

If the cream cheese is too firm, microwave it for a few seconds to soften it before mixing. A smooth sauce spreads better through the casserole and coats the pierogi evenly.
