For the Beef Ribs
- 3 to 4 pounds beef short ribs
- 2 tablespoons olive oil
- 1 ½ teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- ½ teaspoon chili powder
- ½ teaspoon dried thyme, optional
For the BBQ Braising Sauce
- 1 cup barbecue sauce
- ½ cup beef broth
- 2 tablespoons brown sugar
- 2 tablespoons honey
- 2 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- 1 tablespoon apple cider vinegar
- 1 tablespoon tomato paste
- 3 cloves garlic, minced
- 1 small onion, finely chopped
For the Sticky Glaze
- ½ cup barbecue sauce
- 2 tablespoons honey
- 1 tablespoon brown sugar
- 1 teaspoon apple cider vinegar
- 1 teaspoon Worcestershire sauce
Step 1: Prepare the Beef Short Ribs
Start by patting the short ribs dry with paper towels. This helps the seasoning stick and also helps the meat brown better when seared.
Place the ribs on a tray and season them with salt, black pepper, garlic powder, onion powder, smoked paprika, chili powder, and thyme.
Rub the seasoning all over the meat, including the sides. Let the ribs rest for about 20 minutes at room temperature. This gives the seasoning time to settle into the surface of the meat.
Step 2: Sear the Ribs
Heat olive oil in a large heavy pot or skillet over medium-high heat.
When the oil is hot, add the short ribs. Sear them for about 2 to 3 minutes on each side until they develop a deep brown crust.
Do not rush this step. Searing builds flavor and gives the ribs a richer taste. You are not trying to cook the ribs fully at this stage; you are only browning the outside.

Step 3: Cook the Onion and Garlic
In the same pan, add the chopped onion. Cook for 3 to 4 minutes until softened.
Add the minced garlic and cook for another 30 seconds. Stir often so the garlic does not burn.
The onion and garlic will absorb the browned bits left from the ribs. These browned bits add deep flavor to the sauce.
