Step 1: Prepare the Potatoes
Start by washing the potatoes very well. You can peel them if you want a softer and cleaner look, or leave the skin on for a more rustic texture.
Yukon gold potatoes are excellent because they become creamy inside and golden outside. Russet potatoes also work well because they crisp beautifully.
After washing, dry the potatoes with a clean towel.
Step 2: Slice the Potatoes Thinly
Use a sharp knife or mandoline slicer to cut the potatoes into very thin slices. The slices should be about 1/8 inch thick.
Thin slices are important because they cook evenly and become crisp around the edges. If the slices are too thick, the stacks may take longer to bake and may not become as crispy.
