Step 1: Make Sure the Starter Is Active

A weak starter can make the bread dense, so this step is important. Feed your starter 4 to 8 hours before baking, depending on your room temperature. When it has doubled in size and looks bubbly, it is ready to use.
Step 2: Mix the Dough
In a large mixing bowl, combine the active sourdough starter, lukewarm water, and honey or sugar. Stir until the starter is mostly dissolved.
Add the bread flour and mix until a rough dough forms. The dough may look shaggy and uneven at first, and that is normal.

Use your hands to gently pinch and fold the salt into the dough. At first, the dough may feel sticky, but it will become smoother as you work it.
Cover the bowl again and let it rest for another 30 minutes.
Step 4: Stretch and Fold the Dough
Instead of heavy kneading, sourdough bread uses stretch-and-folds.
Wet your hands slightly so the dough does not stick. Grab one side of the dough, stretch it upward, then fold it over the center. Turn the bowl and repeat this on all four sides.
Cover the bowl and rest for 30 minutes.
Repeat this stretch-and-fold process 3 to 4 times over the next 2 hours. Each round helps strengthen the dough and build structure.
