Pineapple Raspberry Cobbler Cake: A Sweet, Tangy, Buttery Dessert Recipe

Pineapple Raspberry Cobbler Cake is a bright, fruity dessert that combines the juicy sweetness of pineapple with the tart freshness of raspberries and the soft, golden texture of a cobbler-style cake topping. It is the kind of dessert that feels homemade, comforting, and colorful, but it is also very easy to prepare.

This recipe is perfect for family dinners, summer gatherings, potlucks, holidays, or anytime you want a dessert that is simple but still impressive. The pineapple creates a sweet tropical base, the raspberries add a beautiful red color and tangy flavor, and the cake topping bakes into a buttery golden layer that tastes soft in the center and slightly crisp around the edges.

What Makes This Cobbler Cake Special?

This dessert is a mix between a fruit cobbler and a cake. A traditional cobbler usually has fruit on the bottom and a biscuit-like topping, while a cake has a softer, more even crumb. This recipe brings both ideas together.

As it bakes, the fruit becomes warm and syrupy. The cake batter rises around the fruit, soaking up some of the juices while still forming a golden top. Every spoonful has soft cake, sweet pineapple, tart raspberry, and buttery richness.

Ingredients

For the Fruit Layer

  • 1 can pineapple chunks or crushed pineapple, about 20 oz, with juice
  • 1 ½ cups fresh or frozen raspberries
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • ¼ teaspoon salt

For the Cobbler Cake Batter

  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup milk
  • ½ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon, optional

Optional Topping

  • 2 tablespoons brown sugar
  • 2 tablespoons shredded coconut
  • ¼ cup chopped pecans or almonds
  • Powdered sugar for serving
  • Vanilla ice cream or whipped cream

Step 1: Prepare the Baking Dish

Preheat your oven to 350°F / 175°C.

Choose an 8×8 inch or 9×9 inch baking dish for a thicker cobbler cake. You can also use a medium oval or round baking dish.

Lightly grease the dish with butter or non-stick spray. This prevents the fruit from sticking and makes serving easier.

Step 2: Prepare the Pineapple

If using pineapple chunks, you can leave them whole or cut them into smaller pieces. If using crushed pineapple, keep it as it is.

Do not drain all the juice. The pineapple juice helps create the sweet syrupy fruit layer at the bottom of the cobbler cake.

Pour the pineapple with its juice into a mixing bowl.

Step 3: Add the Raspberries

Add the raspberries to the pineapple.

Fresh raspberries work beautifully because they keep some of their shape. Frozen raspberries also work well, but do not thaw them first. Adding them frozen helps prevent too much juice from being released before baking.

The raspberries give the dessert a bright color and balance the sweetness of the pineapple.

Step 4: Sweeten and Thicken the Fruit

Add sugar, lemon juice, vanilla extract, cornstarch, and salt to the fruit mixture.

Stir gently until the fruit is coated.

The cornstarch is important because it thickens the pineapple and raspberry juices as they bake. Without it, the cobbler cake may become too watery.

The lemon juice adds freshness and keeps the dessert from tasting too sweet.

Step 5: Add the Fruit to the Baking Dish

Pour the pineapple raspberry mixture into the prepared baking dish.

Spread it evenly across the bottom.

Make sure the fruit is in a level layer so the cake batter can bake evenly over the top.

Set the dish aside while you prepare the cake batter.
