Step 1: Prepare the Corn
Start by preparing the corn kernels.
If using fresh corn, cut the kernels off the cob with a sharp knife. Fresh corn gives the fritters a sweet, juicy flavor.
If using frozen corn, thaw it first and drain any extra water.
If using canned corn, drain it very well and pat it dry with paper towels.
This step is important because too much moisture can make the fritter batter loose and prevent the fritters from becoming crispy.
