Slow-Cooker Smothered Cabbage with Bacon: A Southern-Style Comfort Recipe

Slow-Cooker Smothered Cabbage with Bacon is a warm, savory, and deeply comforting dish made with tender cabbage, smoky bacon, onions, garlic, and simple seasonings. It is the kind of recipe that turns basic ingredients into something rich and satisfying. The cabbage slowly cooks down until it becomes soft, buttery, and full of flavor, while the bacon adds a smoky, salty taste that makes the whole dish delicious.

This recipe is perfect as a side dish for family dinners, Sunday meals, holidays, or meal prep. It goes especially well with cornbread, rice, roasted chicken, pork chops, sausage, baked ham, or mashed potatoes. Since it cooks in the slow cooker, it is also very easy to prepare with little hands-on work.

Why This Recipe Works

Cabbage becomes sweeter and softer when it cooks slowly. Instead of boiling it quickly, the slow cooker gently breaks it down and allows it to absorb the flavor of bacon, onion, garlic, butter, and broth. The result is not plain cabbage; it is rich, smoky, tender, and almost buttery.

The bacon is important because it gives the dish a deep savory flavor. The onion adds natural sweetness, the garlic adds warmth, and the broth keeps everything moist while the cabbage slowly “smothers” itself in its own juices.

Ingredients

Main Ingredients

  • 1 large head green cabbage
  • 8 slices bacon, chopped
  • 1 large onion, sliced or diced
  • 3 cloves garlic, minced
  • 3 tablespoons butter
  • ½ cup chicken broth
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon red pepper flakes, optional
  • 1 teaspoon sugar, optional
  • 1 tablespoon apple cider vinegar, optional

Optional Add-Ins

  • Smoked sausage slices
  • Diced ham
  • Carrots
  • Bell peppers
  • Potatoes
  • Cajun seasoning
  • Hot sauce

Step 1: Prepare the Cabbage

Start by removing the tough outer leaves from the cabbage. Rinse the cabbage well and pat it dry.

Cut the cabbage in half, then cut each half into quarters. Remove the hard core from the center.

Slice the cabbage into thick strips or chop it into large pieces. Do not cut it too small because it will shrink as it cooks.

Place the chopped cabbage into the slow cooker. It may look like a lot at first, but cabbage cooks down significantly.

Step 2: Cook the Bacon

Place the chopped bacon in a skillet over medium heat.

Cook it until it becomes crispy and golden. Stir often so it cooks evenly.

Once the bacon is cooked, remove it with a slotted spoon and place it on a paper towel-lined plate.

Leave about 2 tablespoons of bacon grease in the skillet. This grease will add flavor to the onions and garlic.
