Ingredients for Chinese Pepper Steak with Onions

Here’s what you’ll need for a serving of 4:

For the Beef Marinade:

  • 1 lb (450g) flank steak or sirloin, thinly sliced against the grain
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon cornstarch
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground black pepper

For the Stir-Fry:

  • 2 tablespoons vegetable oil (divided)
  • 1 medium yellow onion, sliced into thin wedges
  • 1 red bell pepper, sliced into strips
  • 1 green bell pepper, sliced into strips
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated

For the Sauce:

  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce (optional, for added sweetness)
  • 1/4 cup beef or chicken broth
  • 1 teaspoon cornstarch, mixed with 2 tablespoons water (slurry for thickening)

Step-by-Step Instructions

Step 1: Prepare the Beef

  1. Slice the Beef: Thinly slice the steak against the grain. Cutting against the grain ensures tender, melt-in-your-mouth pieces of meat.
  2. Marinate: In a bowl, combine the soy sauce, oyster sauce, cornstarch, sesame oil, and black pepper. Add the beef slices and mix until evenly coated. Let it marinate for 15–20 minutes while you prepare the other ingredients.

Step 2: Prep the Vegetables and Sauce

  1. Slice the Vegetables: Cut the onions into thin wedges and slice the bell peppers into strips. Keep them roughly the same size for even cooking.
  2. Mix the Sauce: In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, and beef broth. Set aside.

Step 3: Sear the Beef

  1. Heat the Pan: Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Ensure the pan is hot before adding the beef.
  2. Cook the Beef: Add the marinated beef to the hot pan, spreading it out in a single layer. Sear for about 1–2 minutes on each side until browned but not fully cooked. Remove the beef and set it aside.
