  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • 1 teaspoon salt, divided
  • ½ teaspoon red pepper flakes, optional
  • 1 ½ cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • ¼ cup grated parmesan cheese
  • 2 tablespoons chopped parsley or basil, optional

Step 1: Prepare the Zucchini

Wash the zucchini and dry it well. Cut off both ends, then slice the zucchini into medium-thick rounds or half-moons.

Place the sliced zucchini in a bowl and sprinkle it with about ½ teaspoon salt. Toss gently and let it sit for 15 to 20 minutes.

This step draws out extra water from the zucchini. After resting, pat the slices dry with paper towels. This helps the casserole bake up thick and flavorful instead of watery.

Step 2: Brown the Ground Beef

Preheat your oven to 375°F / 190°C.

Heat a large skillet over medium-high heat. Add the ground beef and break it apart with a spoon.

Cook until the beef is browned and no pink remains. This usually takes 6 to 8 minutes.

Drain any excess grease from the pan. Too much grease can make the casserole heavy and oily.

Step 3: Add Onion and Garlic

Add the diced onion to the cooked beef. Cook for 3 to 4 minutes until the onion becomes soft.

Add the minced garlic and cook for another 30 seconds. Stir often so the garlic does not burn.

The onion and garlic create the main flavor base of the casserole, giving the beef a deeper homemade taste.

Step 4: Build the Tomato Beef Sauce

Add the diced tomatoes, tomato sauce, and tomato paste to the skillet.

Season with Italian seasoning, oregano, paprika, garlic powder, black pepper, red pepper flakes if using, and the remaining salt.

Stir everything together and let the sauce simmer for 5 to 7 minutes. This allows the tomato flavor to deepen and the beef to absorb the seasonings.

The mixture should be saucy but not too watery. If it looks very thin, let it simmer uncovered for a few extra minutes.

Step 5: Lightly Cook the Zucchini

In another skillet, heat the olive oil over medium heat.

Add the zucchini slices and cook for 3 to 4 minutes, just until they begin to soften slightly.

You do not need to fully cook them because they will continue baking in the oven. The goal is only to remove some moisture and give them better texture.

After cooking, remove the zucchini from the pan and set it aside.
