Loaded Bacon Egg Salad Sandwich: A Creamy, Crunchy, Flavor-Packed Sandwich Recipe

A Loaded Bacon Egg Salad Sandwich is a rich and satisfying twist on the classic egg salad sandwich. It combines creamy chopped eggs, crispy bacon, fresh herbs, crunchy vegetables, and a flavorful dressing, then stacks everything between slices of soft bread, toasted bread, croissants, or sandwich rolls.

This sandwich is perfect for lunch, brunch, picnics, meal prep, or a quick dinner. The eggs make it creamy and filling, the bacon adds smoky crunch, and the extra “loaded” ingredients give every bite more texture and flavor.

Why This Sandwich Is So Good

Traditional egg salad is simple and creamy, but this loaded version is more exciting. The crispy bacon adds saltiness, the green onions or chives add freshness, celery gives crunch, and a little mustard gives the dressing a tangy bite.

The key is balance. The filling should be creamy but not watery, rich but not too heavy, and flavorful enough to stand out between the bread.

Ingredients

For the Egg Salad Filling

  • 8 large eggs
  • 6 slices bacon
  • ⅓ cup mayonnaise
  • 1 tablespoon Dijon mustard or yellow mustard
  • 1 tablespoon sour cream or Greek yogurt, optional
  • 1 teaspoon lemon juice or pickle juice
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ teaspoon black pepper
  • Salt to taste
  • ¼ cup celery, finely diced
  • 2 tablespoons green onions or chives, chopped
  • 2 tablespoons dill pickles, finely chopped, optional
  • ½ cup shredded cheddar cheese, optional

For the Sandwiches

  • 8 slices bread, toasted if preferred
  • Lettuce leaves
  • Tomato slices
  • Extra bacon, optional
  • Butter for toasting bread, optional

Step 1: Boil the Eggs

Place the eggs in a saucepan and cover them with cold water. The water should be about one inch above the eggs.

Bring the water to a boil over medium-high heat. Once it starts boiling, turn off the heat, cover the pan, and let the eggs sit for about 10 to 12 minutes.

After that, transfer the eggs immediately to a bowl of ice water. Let them cool for at least 10 minutes.

The ice bath stops the cooking process and makes the eggs easier to peel.

Step 2: Cook the Bacon

While the eggs cool, cook the bacon.

Place the bacon slices in a skillet over medium heat. Cook until they are crispy and golden, turning them as needed.

Transfer the cooked bacon to a paper towel-lined plate to drain excess grease.

Once cooled, chop or crumble the bacon into small pieces.

For the best texture, keep some bacon pieces slightly larger so the sandwich has a good crunch.
