Crockpot Cranberry Chicken: A Sweet, Savory, and Easy Slow Cooker Dinner
Crockpot Cranberry Chicken is a simple, flavorful slow cooker recipe made with tender chicken, cranberry sauce, onion soup seasoning, and a rich sweet-savory sauce. It is the kind of dish that tastes special but requires very little work. The slow cooker does most of the cooking, turning basic ingredients into juicy chicken coated in a glossy cranberry sauce.
This recipe is perfect for busy weeknights, holiday meals, family dinners, potlucks, or meal prep. The cranberry sauce gives the dish a bright, slightly tangy sweetness, while the savory seasoning balances it so the chicken does not taste like dessert. The result is warm, comforting, and full of flavor.
Why Crockpot Cranberry Chicken Works So Well
The slow cooker is ideal for this recipe because it gives the chicken time to absorb the sauce. As the cranberry sauce melts down, it mixes with the seasoning and broth to create a thick glaze-like gravy. The chicken becomes soft and tender, and the sauce becomes richer as it cooks.
This dish is also very flexible. You can make it with chicken breasts, chicken thighs, or even drumsticks. It can be served over rice, mashed potatoes, noodles, stuffing, roasted vegetables, or crusty bread.
Ingredients
Main Ingredients
- 4 boneless, skinless chicken breasts or 6 chicken thighs
- 1 can whole berry cranberry sauce or jellied cranberry sauce
- 1 packet dry onion soup mix
- ½ cup chicken broth
- 2 tablespoons orange juice, optional
- 1 tablespoon Dijon mustard
- 1 tablespoon brown sugar, optional
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
- 1 tablespoon butter, optional
Optional Garnish
- Fresh parsley
- Orange zest
- Chopped green onions
- Dried cranberries
- Toasted pecans
Step 1: Prepare the Chicken
Start by patting the chicken dry with paper towels. This helps the seasoning stick better and prevents extra liquid from watering down the sauce.
Place the chicken breasts or thighs on a plate and season both sides with black pepper and garlic powder.
You do not need to add much salt because the onion soup mix is already salty.
Step 2: Arrange the Chicken in the Crockpot
Place the seasoned chicken in the bottom of the slow cooker.
Try to arrange the pieces in a single layer if possible. This helps the chicken cook evenly and allows every piece to sit in the sauce.
If the pieces overlap slightly, that is fine, but avoid stacking them too tightly.
Step 3: Make the Cranberry Sauce Mixture
In a medium bowl, add the cranberry sauce, dry onion soup mix, chicken broth, Dijon mustard, orange juice, and brown sugar if using.
Stir everything together until combined.
The cranberry sauce may still look slightly chunky, especially if you are using whole berry cranberry sauce. That is normal. It will melt and smooth out as it cooks.
The Dijon mustard adds a little sharpness, the chicken broth keeps the sauce from becoming too thick, and the orange juice adds brightness.
Step 4: Pour the Sauce Over the Chicken
Pour the cranberry mixture evenly over the chicken in the crockpot.
Use a spoon to spread the sauce so every piece of chicken is covered.
Add a small tablespoon of butter on top if you want a richer, smoother sauce.
At this point, the dish may look simple, but the flavor will deepen as it cooks slowly.
Step 5: Slow Cook the Chicken
Cover the crockpot with the lid.
Cook on low for 4 to 6 hours or on high for 2 to 3 hours.
Chicken breasts usually cook faster than thighs. Chicken thighs can handle a longer cooking time and often stay juicier.
The chicken is ready when it is tender and reaches an internal temperature of 165°F / 74°C.
Avoid opening the lid too often while cooking. Every time the lid is opened, heat escapes and the cooking time becomes longer.
