Slow Cooker Creamy Reuben Soup: A Comforting Twist on the Classic Sandwich
Slow Cooker Creamy Reuben Soup transforms the famous Reuben sandwich into a warm, hearty bowl of comfort food. Inspired by the classic combination of corned beef, Swiss cheese, sauerkraut, and creamy dressing, this soup delivers all the familiar flavors in a rich and satisfying form.
The slow cooker allows the ingredients to simmer gently, creating a smooth broth filled with tender pieces of corned beef, soft vegetables, tangy sauerkraut, and melted cheese. It is the perfect meal for cold days, family dinners, game nights, or anyone who loves the unique combination of savory, creamy, and slightly tangy flavors.
What Makes This Soup Special?
A traditional Reuben sandwich combines:
- Thinly sliced corned beef
- Swiss cheese
- Sauerkraut
- Rye bread
- Thousand Island or Russian dressing
This soup captures those same flavors but turns them into a creamy, spoonable dish. The slow cooking process helps the flavors blend together while keeping the meat tender and the broth rich.
The addition of cream and cheese creates a velvety texture, while sauerkraut adds the signature tang that makes a Reuben unforgettable.

For the Soup
- 2 tablespoons butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 3 medium potatoes, peeled and diced
- 2 cups cooked corned beef, chopped into small pieces
- 2 cups sauerkraut, drained and roughly chopped
- 4 cups chicken broth
- 1 cup beef broth, optional for deeper flavor
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon dried parsley
- 1 bay leaf
For the Creamy Finish
- 1 cup heavy cream
- 1 cup shredded Swiss cheese
- ½ cup cream cheese, softened
- 2 tablespoons all-purpose flour
- 3 tablespoons water or broth
For Serving (Optional)
- Extra shredded Swiss cheese
- Crispy rye bread pieces
- Fresh parsley
- Cracked black pepper
- A small spoon of Thousand Island dressing
Step 1: Prepare the Ingredients
Begin by preparing all your ingredients.
Dice the potatoes into small, even cubes so they cook at the same speed. Chop the corned beef into bite-sized pieces. Drain the sauerkraut well and roughly chop it if the pieces are very long.
Preparing everything before cooking makes the slow cooker process easier and helps the ingredients cook evenly.
Step 2: Sauté the Onion and Garlic
Although you can add everything directly to the slow cooker, sautéing the onion and garlic first creates a deeper flavor.
Heat butter in a skillet over medium heat.
Add the chopped onion and cook for 3–4 minutes until soft and slightly golden.
Add the minced garlic and cook for another 30 seconds until fragrant.
This step creates the flavorful base of the soup.
Step 3: Add Ingredients to the Slow Cooker
Transfer the cooked onion and garlic into the slow cooker.
Add:
- Diced potatoes
- Chopped corned beef
- Sauerkraut
- Chicken broth
- Beef broth (if using)
- Worcestershire sauce
- Dijon mustard
- Black pepper
- Paprika
- Garlic powder
- Onion powder
- Parsley
- Bay leaf
Stir gently to combine everything.
The broth should cover most of the ingredients. If needed, add a little extra broth or water.
