Every family often has its own special version, but the heart of a great Southern Potato Salad remains the same: soft potatoes, a creamy dressing, and layers of simple flavors that come together beautifully.

What Makes Southern Potato Salad Special?

The secret to a delicious Southern Potato Salad is not complicated ingredients—it is the preparation.

The potatoes must be cooked until tender but not falling apart. The dressing should be creamy but not heavy, with enough mustard and seasoning to give it a slightly tangy flavor. Hard-boiled eggs add richness, while pickles, celery, and onions provide freshness and texture.

A good Southern Potato Salad is even better after resting because the potatoes absorb the flavors of the dressing.


Ingredients

For the Potato Salad

  • 3 pounds yellow potatoes or Yukon Gold potatoes
  • 5 large eggs
  • 1 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 2 tablespoons sweet pickle relish
  • ½ cup finely diced celery
  • ½ cup finely diced onion
  • ¼ cup chopped dill pickles, optional
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon sugar
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder

For Garnishing

  • Paprika sprinkled on top
  • Chopped fresh parsley
  • Sliced boiled eggs
  • Green onions
  • Pickle slices

Step 1: Prepare the Potatoes

Begin by washing the potatoes thoroughly.

You can peel the potatoes before cooking or leave the skins on for extra flavor. Traditional Southern Potato Salad usually uses peeled potatoes because it creates a smoother, creamier texture.

Cut the potatoes into evenly sized chunks, about 1 to 1½ inches. Cutting them evenly ensures they cook at the same speed.

Place the potatoes into a large pot and cover them with cold water.

Add a generous pinch of salt to the water.

Starting with cold water allows the potatoes to cook evenly from the inside out.


Step 2: Boil the Potatoes

Bring the water to a boil over medium-high heat.

Once boiling, reduce the heat slightly and cook the potatoes for about 12–15 minutes.

The potatoes are ready when a fork can easily pierce them, but they should still hold their shape.

Avoid overcooking because potatoes that become too soft will turn the salad into mashed potatoes.

Drain the potatoes well and allow them to cool slightly.


Step 3: Cook the Eggs

While the potatoes are cooking, prepare the hard-boiled eggs.

Place the eggs in a saucepan and cover them with cold water.

Bring the water to a boil. Once boiling, turn off the heat, cover the pan, and let the eggs sit for about 10–12 minutes.

Transfer the eggs into a bowl of ice water to cool.

Once cooled, peel the eggs and chop them into small pieces.

Reserve a few slices for decoration if desired.


Step 4: Prepare the Vegetables

While the potatoes and eggs cool, prepare the vegetables.

Finely dice:

  • Celery
  • Onion
  • Pickles

Small pieces work best because they distribute evenly throughout the salad.

The celery adds crunch, the onion adds a sharp savory flavor, and the pickles provide the classic Southern tang.

If you prefer a milder onion flavor, soak the diced onion in cold water for 5–10 minutes, then drain before adding.
