Crinkle Cake: A Crispy, Buttery, and Irresistibly Sweet Layered Dessert
Crinkle Cake is a beautiful dessert made from thin sheets of phyllo dough folded into delicate waves, soaked with a rich custard mixture, and baked until golden and crisp. After baking, a sweet syrup is poured over the warm cake, creating a wonderful contrast between the crunchy top layers and the soft, creamy center.
This dessert became popular because of its unique appearance and texture. The “crinkle” effect comes from scrunching the phyllo sheets before baking, creating layers that become beautifully crisp while allowing the creamy filling to settle between them.
With its golden color, buttery aroma, and delicate sweetness, Crinkle Cake is perfect for holidays, family gatherings, afternoon tea, or whenever you want an elegant dessert that is surprisingly easy to make.
What Makes Crinkle Cake Special?
Unlike traditional cakes made with flour and batter, Crinkle Cake uses phyllo pastry as its main ingredient. The thin layers create a texture similar to baklava but with a softer custard-like center.
The magic happens during baking:
- The phyllo layers become crispy and golden.
- The custard mixture sinks into the folds.
- The sugar syrup adds moisture and sweetness.
- The final dessert has crunchy edges and a creamy interior.
It is a dessert that combines simplicity with a bakery-style appearance.
Ingredients
For the Cake
- 1 package phyllo dough (about 16 oz / 450 g)
- 1 cup unsalted butter, melted
- 4 large eggs
- 1 cup granulated sugar
- 1 cup whole milk
- 1 cup heavy cream
- 2 teaspoons vanilla extract
- 1 teaspoon baking powder
- 1 tablespoon lemon zest (optional)
- A pinch of salt
For the Syrup
- 1 cup granulated sugar
- ¾ cup water
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 small cinnamon stick (optional)
Optional Garnishes
- Powdered sugar
- Chopped pistachios
- Almond slices
- Fresh berries
- Whipped cream
Step 1: Prepare the Phyllo Dough
Remove the phyllo dough from the freezer and allow it to thaw completely according to the package instructions.
Phyllo dough is very thin and delicate, so keep it covered with a clean kitchen towel while working. This prevents it from drying out and cracking.
Do not worry if some sheets tear. The folded texture of Crinkle Cake actually hides small imperfections.
Step 2: Prepare the Baking Dish
Preheat your oven to:
350°F (175°C)
Grease a 9×13-inch baking dish generously with melted butter.
A glass or ceramic dish works especially well because it allows the edges to become beautifully golden.
Step 3: Create the Crinkle Layers
Take one sheet of phyllo dough and lightly brush it with melted butter.
Instead of laying it flat, gently gather the sheet from both sides to create accordion-like folds.
Place the folded sheet into the baking dish.
Repeat this process with the remaining phyllo sheets until the entire dish is filled with crinkled layers.
Do not press the layers too tightly. The air pockets between the folds are what create the beautiful texture.
Step 4: Add Butter Between the Layers
Once all the phyllo sheets are arranged, brush the remaining melted butter generously over the top.
Make sure the butter reaches the folds because it helps create the crispy golden texture.
The butter also adds a rich flavor and prevents the pastry from becoming dry.
