Ingredients

For the Beef and Broth

  • 4 cups beef broth
  • 1 can cream of mushroom soup (optional, for a creamy version)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt, or to taste
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf

For the Noodles

  • 12 ounces egg noodles
  • 2 tablespoons butter
  • Fresh parsley for garnish, optional

Optional Additions

  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup mushrooms, sliced
  • 1 cup frozen peas
  • 1 tablespoon cornstarch mixed with water (for thickening)

Step 1: Prepare the Beef

Start by cutting the beef chuck roast into large bite-sized pieces.

Chuck roast is the best choice because it contains enough fat and connective tissue to become tender during slow cooking. Lean cuts of beef may become dry after several hours.

Pat the beef pieces dry with paper towels. Removing excess moisture helps the meat brown better.


Step 2: Brown the Beef (Optional but Recommended)

Heat olive oil in a large skillet over medium-high heat.

Add the beef pieces in batches and sear them for 2 to 3 minutes per side until they develop a deep brown crust.

Do not overcrowd the pan. Browning in batches gives the beef better flavor.

This step is optional, but it adds a richer, more complex taste because the browned surface creates extra savory flavors that will enhance the broth.

Transfer the browned beef to the crockpot.


Step 3: Sauté the Onion and Garlic

Using the same skillet, add the diced onion.

Cook for 3 to 4 minutes until softened.

Add the minced garlic and cook for another 30 seconds until fragrant.

The onion and garlic create the flavor foundation of the dish.

Transfer them to the slow cooker with the beef.


Step 4: Add the Seasonings and Liquid

Add the beef broth, Worcestershire sauce, salt, black pepper, onion powder, garlic powder, thyme, parsley, and bay leaf.

If you are making the creamy version, add the cream of mushroom soup and stir gently.

The broth should surround the beef and create the flavorful cooking liquid that will later coat the noodles.
