Unlike traditional heavy salads, Shoepeg Corn Salad is light, crunchy, and full of bright flavors. The small, tender kernels of shoepeg corn give the salad a delicate sweetness, while fresh vegetables add texture and color. The dressing brings everything together with a creamy, slightly tangy flavor that makes every bite satisfying.

What Is Shoepeg Corn?

Shoepeg corn is a variety of white sweet corn with small, narrow kernels. It has a tender texture and a slightly sweeter flavor compared with regular yellow corn.

The name comes from the shape of the kernels, which are long and thin like old-fashioned wooden shoe pegs.

If shoepeg corn is not available, you can substitute it with canned white corn, sweet corn, or a mixture of white and yellow corn.


Ingredients

For the Salad

  • 2 cans (11 ounces each) shoepeg corn, drained
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 green bell pepper, finely chopped
  • ½ red bell pepper, finely chopped
  • ½ cup red onion, finely diced
  • ½ cup celery, finely chopped
  • ½ cup shredded carrots, optional
  • ½ cup chopped fresh parsley or cilantro
  • ½ cup shredded cheddar cheese, optional

For the Creamy Dressing

  • ½ cup mayonnaise
  • ¼ cup sour cream or Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon sugar or honey
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon paprika

Step 1: Prepare the Corn

Open the cans of shoepeg corn and drain them completely.

Excess liquid can make the salad watery, so allow the corn to drain for a few minutes. You can also gently pat it dry with a paper towel.

Place the drained corn in a large mixing bowl.

If using fresh corn, cook the corn briefly, allow it to cool, then remove the kernels from the cob.


Step 2: Prepare the Vegetables

Wash and dry all vegetables before cutting.

Dice the cucumber into small pieces, chop the bell peppers, finely slice the red onion, and chop the celery.

The goal is to create small, even pieces so every spoonful contains a mixture of flavors.

For a milder onion taste, soak the chopped red onion in cold water for 5 to 10 minutes, then drain before adding it to the salad.


Step 3: Combine the Salad Ingredients

Add the prepared vegetables to the bowl with the shoepeg corn.

Add the cherry tomatoes, carrots, parsley, and cheese if using.

Gently toss everything together until the ingredients are evenly distributed.

At this stage, the salad should already look colorful and fresh.


Step 4: Prepare the Dressing

In a small bowl, combine:

  • Mayonnaise
  • Sour cream or Greek yogurt
  • Apple cider vinegar
  • Lemon juice
  • Sugar or honey
  • Garlic powder
  • Onion powder
  • Salt
  • Black pepper
  • Paprika

Whisk everything together until smooth and creamy.

Taste the dressing and adjust the seasoning if needed.

If you prefer a tangier salad, add a little more vinegar or lemon juice. If you prefer a sweeter flavor, add a small amount of extra honey or sugar.
