Italian Drunken Noodles: A Bold and Flavorful Step-by-Step Pasta Recipe

Italian Drunken Noodles are a hearty pasta dish that combines tender noodles, juicy Italian sausage, colorful bell peppers, onions, garlic, tomatoes, fresh herbs, and a rich wine-infused tomato sauce. Despite the name, the dish is entirely family-friendly, as the alcohol in the wine cooks off during simmering, leaving behind a deep, complex flavor.

This recipe is inspired by Italian cuisine with a rustic, comforting twist. The combination of sweet peppers, savory sausage, aromatic herbs, and a splash of white wine creates a rich sauce that perfectly coats every strand of pasta. It is an ideal meal for weeknight dinners, family gatherings, or whenever you’re craving a restaurant-quality pasta dish at home.

Why Are They Called “Drunken Noodles”?

The term “drunken” refers to the addition of wine in the sauce rather than the noodles themselves. As the wine cooks, it enhances the flavors of the tomatoes, garlic, herbs, and sausage while adding subtle acidity and depth. By the time the dish is finished, the alcohol has largely evaporated, leaving behind only its rich flavor.

Ingredients

For the Pasta

  • 12 ounces pappardelle, fettuccine, or egg noodles
  • Water for boiling
  • 1 tablespoon salt

For the Sauce

  • 1 pound Italian sausage (sweet or mild), casings removed
  • 2 tablespoons olive oil
  • 1 medium onion, thinly sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 orange bell pepper, sliced (optional)
  • 4 cloves garlic, minced
  • 1 teaspoon crushed red pepper flakes (optional)
  • 1 cup dry white wine
  • 1 can (14 ounces) diced tomatoes
  • 2 tablespoons tomato paste
  • ½ cup chicken broth
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried oregano
  • ½ teaspoon paprika
  • Salt and freshly ground black pepper to taste

For Finishing

  • ¼ cup chopped fresh basil
  • 2 tablespoons chopped fresh parsley
  • Freshly grated Parmesan cheese
  • Extra basil leaves for garnish

Step 1: Cook the Pasta

Bring a large pot of water to a rolling boil.

Add the salt, then cook the pasta according to the package directions until it is al dente. The noodles should be tender but still slightly firm.

Reserve about one cup of the pasta cooking water before draining.

Drain the pasta but do not rinse it. Leaving the starch on the noodles helps the sauce cling better.


Step 2: Brown the Italian Sausage

Heat the olive oil in a large skillet or Dutch oven over medium-high heat.

Add the Italian sausage and break it into bite-sized pieces using a wooden spoon.

Cook for about 6 to 8 minutes until browned and fully cooked.

If there is excess grease, carefully drain most of it, leaving about one tablespoon in the pan for flavor.


Step 3: Cook the Vegetables

Add the sliced onions and bell peppers to the skillet.

Cook for about 5 to 6 minutes, stirring occasionally, until the vegetables begin to soften while still retaining a slight crispness.

Add the minced garlic and crushed red pepper flakes.

Cook for another minute until the garlic becomes fragrant.

Avoid overcooking the garlic, as it can become bitter.


Step 4: Deglaze with Wine

Pour the white wine into the hot skillet.

Use a wooden spoon to scrape up the browned bits from the bottom of the pan.

These caramelized bits contain concentrated flavor and help create a richer sauce.

Allow the wine to simmer for about 3 to 5 minutes until it has reduced by approximately half.

This reduction concentrates the flavor while allowing the alcohol to evaporate.
