California Spaghetti Salad: A Fresh, Colorful Step-by-Step Recipe

California Spaghetti Salad is a vibrant pasta salad made with tender spaghetti, crisp fresh vegetables, olives, Parmesan cheese, and a tangy homemade Italian dressing. Inspired by the fresh flavors of California cuisine, this salad is light, colorful, and full of crunchy vegetables that pair perfectly with a zesty herb dressing.

Unlike traditional creamy pasta salads, California Spaghetti Salad is dressed with a flavorful vinaigrette that allows the freshness of the vegetables to shine. It is an excellent dish for summer barbecues, potlucks, picnics, family gatherings, meal prep, or as a refreshing side dish alongside grilled meats and seafood.

One of the best features of this salad is that it tastes even better after chilling, giving the pasta time to absorb all the delicious flavors.

Why You’ll Love This Recipe

California Spaghetti Salad is easy to prepare, packed with colorful vegetables, and can be customized with your favorite ingredients. The thin spaghetti absorbs the dressing beautifully, while the vegetables remain crisp and refreshing.

The combination of juicy tomatoes, crunchy cucumbers, sweet bell peppers, olives, and tangy Italian dressing creates a refreshing dish that is satisfying without feeling heavy.

Ingredients

For the Salad

  • 1 pound spaghetti
  • 1 cup cherry tomatoes, halved
  • 1 large cucumber, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • ½ red onion, finely diced
  • 1 cup sliced black olives
  • 1 cup shredded carrots
  • ½ cup grated Parmesan cheese
  • ¼ cup chopped fresh parsley

For the California Italian Dressing

  • ½ cup extra virgin olive oil
  • ¼ cup red wine vinegar
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon crushed red pepper flakes (optional)

Step 1: Cook the Spaghetti

Bring a large pot of water to a rolling boil.

Add a generous amount of salt to the boiling water before adding the spaghetti. Salting the water helps flavor the pasta from the inside.

Cook the spaghetti according to the package directions until it reaches an al dente texture. The pasta should be tender but still slightly firm.

Avoid overcooking because the pasta will continue absorbing dressing while it chills.

Step 2: Cool the Pasta

Drain the cooked spaghetti immediately.

Rinse it thoroughly under cold running water to stop the cooking process and cool the pasta quickly.

Allow the spaghetti to drain well before transferring it to a large mixing bowl.

If the strands stick together, drizzle them with a teaspoon of olive oil and toss gently.

Step 3: Cut the Vegetables

While the pasta cools, prepare all of the fresh vegetables.

Slice the cherry tomatoes in half.

Dice the cucumber into small bite-sized cubes.

Cut both bell peppers into small pieces.

Finely dice the red onion.

Slice the black olives if necessary.

Shred the carrots using a box grater if you’re using whole carrots.

Try to cut everything into similar-sized pieces so every bite contains a balanced mixture of vegetables.

Step 4: Make the Dressing

In a medium bowl or glass jar, combine:

  • Olive oil
  • Red wine vinegar
  • Lemon juice
  • Dijon mustard
  • Honey
  • Minced garlic
  • Italian seasoning
  • Oregano
  • Garlic powder
  • Onion powder
  • Salt
  • Black pepper
  • Crushed red pepper flakes (if using)

Whisk vigorously until the dressing becomes smooth and slightly thickened.

If using a jar, secure the lid tightly and shake well until fully combined.

Taste the dressing and adjust the seasoning if needed. It should have a bright, tangy flavor with a pleasant balance of acidity and herbs.
