Crinkle Cake is a beautiful dessert known for its dramatic wrinkled layers of golden, crispy phyllo pastry and a rich, creamy custard filling. It became widely popular through social media because of its unique appearance—the folded, crinkled sheets of pastry create a beautiful texture that looks complicated but is surprisingly simple to prepare.

Inspired by traditional Middle Eastern and Mediterranean pastry techniques, Crinkle Cake combines the delicate crunch of phyllo dough with a sweet vanilla custard and a light syrup glaze. The result is a dessert that is crisp on the outside, soft and creamy inside, and perfectly balanced between sweetness and richness.

For the Cake

  • 1 package phyllo dough (about 16 oz / 450 g), thawed
  • 1 cup unsalted butter, melted
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • Pinch of salt
  • Zest of 1 lemon or orange (optional)

For the Sweet Syrup

  • 1 cup granulated sugar
  • 1 cup water
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Equipment Needed

  • 9 × 13 inch baking dish
  • Mixing bowls
  • Whisk
  • Pastry brush
  • Saucepan
  • Baking knife

Step-by-Step Method

Step 1: Prepare the Syrup

The syrup should be prepared first because it needs time to cool before being poured over the hot cake.

  1. Add sugar and water to a small saucepan.
  2. Heat over medium heat while stirring until the sugar completely dissolves.
  3. Bring the mixture to a gentle boil.
  4. Simmer for about 5–7 minutes until slightly thickened.
  5. Add lemon juice and vanilla extract.
  6. Remove from heat and allow the syrup to cool completely.

A cooled syrup poured over a hot cake creates the perfect texture—crispy edges with a moist interior.


Step 2: Prepare the Phyllo Dough

  1. Remove the thawed phyllo dough from its packaging.
  2. Carefully unroll the sheets.
  3. Cover them with a clean kitchen towel.

Phyllo dries quickly when exposed to air, so keeping it covered prevents cracking.


Step 3: Create the Crinkle Layers

This is the signature step of the recipe.

  1. Take one sheet of phyllo dough.
  2. Hold it from both ends.
  3. Gently fold it back and forth like an accordion.
  4. Place the folded sheet into the baking dish.

Repeat with the remaining sheets.

Arrange the folded phyllo pieces tightly beside each other until the entire dish is filled.

The uneven folds create the famous “crinkle” appearance and allow the custard to settle between the layers.


Step 4: Add the Butter

  1. Brush the melted butter generously over the folded phyllo.
  2. Make sure butter reaches the ridges and folds.

The butter is essential because it helps the pastry become:

  • Golden brown
  • Crispy
  • Rich and flavorful

Do not skip this step because dry phyllo will not develop the proper texture.
