Ingredients
For approximately 4–6 servings, you will need:
- 2 pounds boneless, skinless chicken breasts or chicken thighs
- 2 cups corn kernels, fresh, frozen, or canned and drained
- 8 ounces cream cheese, softened and cut into cubes
- 1 can (10.5 ounces) cream of chicken soup
- 1/2 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheddar cheese
- 2 tablespoons butter
- 2 tablespoons chopped fresh parsley, optional
Step-by-Step Instructions
Step 1: Prepare the Chicken
Pat the chicken breasts or thighs dry with paper towels. If using particularly thick chicken breasts, you can gently pound them to a more even thickness. This helps them cook more evenly in the slow cooker.
Season both sides with the garlic powder, onion powder, smoked paprika, dried thyme, salt, and black pepper.
Step 2: Add the Corn
Place the corn in the bottom of your slow cooker.
If you’re using canned corn, drain it thoroughly first. Frozen corn can be added directly without thawing, while fresh corn can be cut directly from the cob.
Spread the corn into an even layer.
Step 3: Add the Chicken
Place the seasoned chicken on top of the corn.
Pour the chicken broth around the chicken rather than directly over the top. This helps keep the seasoning on the chicken while providing enough moisture for the slow-cooking process.
Step 4: Add the Creamy Ingredients
Spoon the cream of chicken soup around the chicken.
Add the softened cream cheese in small cubes across the top. The cream cheese will gradually soften as the dish cooks and will eventually blend into the corn and broth to create a creamy sauce.
Add the butter as well.
At this stage, don’t worry if the ingredients don’t look perfectly combined. The slow cooker will bring everything together as it cooks.
Step 5: Slow Cook the Chicken
Cover the slow cooker with its lid.
Cook on LOW for approximately 5–6 hours or on HIGH for approximately 2½–3½ hours, depending on the size and thickness of your chicken pieces and the performance of your slow cooker.
Avoid repeatedly removing the lid because each time you open it, heat escapes and the cooking time can increase.
The chicken is ready when it reaches an internal temperature of 165°F (74°C) at the thickest part.
