For the Pork Chops

  • 4 bone-in or boneless pork chops (about 1 inch thick)

  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • ½ teaspoon onion powder

For the Scalloped Potatoes

  • 2½ pounds potatoes (Russet or Yukon Gold), thinly sliced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup heavy cream
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • ½ teaspoon rosemary
  • 1 cup shredded cheddar cheese (optional)
  • ¼ cup grated Parmesan cheese (optional)

Step 1: Prepare the Pork Chops

Start by patting the pork chops dry with paper towels.

Removing excess moisture helps the seasoning stick better and allows the pork to develop a beautiful golden crust.

Season both sides of the pork chops with:

  • Salt
  • Black pepper
  • Garlic powder
  • Paprika
  • Onion powder
  • Thyme

Rub the seasoning gently into the meat so the flavors coat evenly.


Step 2: Sear the Pork Chops

Heat olive oil in a large skillet over medium-high heat.

Place the seasoned pork chops into the hot pan.

Sear each side for about 2–3 minutes until golden brown.

The goal is not to cook them completely but to create a flavorful crust that locks in moisture.

Remove the pork chops from the skillet and set them aside.


Step 3: Prepare the Potatoes

Wash and peel the potatoes if desired.

Slice them into thin, even rounds about ⅛ inch thick.

Thin slices are important because they cook evenly and create the classic scalloped potato texture.

Slice the onion thinly and mince the garlic.


Step 4: Make the Creamy Potato Sauce

In the same skillet used for the pork, melt butter over medium heat.

Add the onions and cook for 3–4 minutes until softened.

Add minced garlic and cook for another 30 seconds until fragrant.

Sprinkle flour over the onions and butter.

Stir continuously for about 1 minute. This creates a smooth base for the sauce.

Slowly pour in the milk and heavy cream while whisking.

Continue cooking until the sauce thickens slightly.

Season with:

  • Salt
  • Pepper
  • Thyme
  • Rosemary

The sauce should be creamy but still pourable.
