Poor Man’s Steak: A Classic Comfort Food Made with Simple Ingredients

Introduction: What Is Poor Man’s Steak?

Poor Man’s Steak is a nostalgic American comfort food that transforms inexpensive ground beef into a meal that feels rich, hearty, and satisfying. Despite its name, this dish is not lacking in flavor. Instead of using expensive cuts of beef, it uses simple pantry-friendly ingredients to create tender, steak-like patties covered in a savory onion and mushroom gravy.

This dish became popular during times when families needed affordable meals that could feed everyone while still feeling special. It is closely related to Salisbury steak and hamburger steak, but the traditional Poor Man’s Steak often includes a unique step: the seasoned ground beef patties are coated with flour or crackers and browned before being slowly baked in a creamy gravy.

The result is a tender, flavorful dish with juicy beef patties surrounded by a rich sauce that pairs perfectly with mashed potatoes, rice, or buttered noodles.

Ingredients

For the Beef Patties

  • 2 pounds ground beef (80/20 blend works best)
  • 1 cup crushed crackers (such as saltines) or breadcrumbs
  • 1 medium onion, finely chopped
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons Worcestershire sauce
  • ½ cup milk

For Coating and Browning

  • ½ cup all-purpose flour
  • 2–3 tablespoons vegetable oil

For the Gravy

  • 1 large onion, sliced
  • 8 ounces mushrooms, sliced (optional)
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups beef broth
  • 1 can cream of mushroom soup (optional for extra creaminess)
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Step-by-Step Method

Step 1: Prepare the Beef Mixture

Begin by placing the ground beef into a large mixing bowl.

Add:

  • Crushed crackers or breadcrumbs
  • Chopped onion
  • Eggs
  • Milk
  • Worcestershire sauce
  • Garlic powder
  • Onion powder
  • Salt and pepper

Mix everything gently with your hands until the ingredients are evenly combined.

Important: Do not overmix the meat. Overworking ground beef can make the patties tough instead of tender.

Allow the mixture to rest for about 10 minutes. This gives the crackers or breadcrumbs time to absorb moisture and helps the patties hold their shape.

Step 2: Shape the “Steaks”

Divide the mixture into equal portions and shape them into oval-shaped patties, similar to small steaks.

A good size is about:

  • ½ to ¾ inch thick
  • 4–5 inches long

The oval shape gives the dish its traditional steak appearance.

Step 3: Coat the Patties

Place flour on a plate.

Lightly coat each beef patty with flour on both sides.

This coating serves two purposes:

  1. It creates a golden crust when browned.
  2. It helps thicken the gravy later during baking.

Shake off any excess flour.
