Reuben Crescent Bake: A Golden, Comforting Twist on the Classic Reuben Sandwich

The Reuben Crescent Bake is a creative oven-baked version of the famous Reuben sandwich, transforming the traditional combination of corned beef, Swiss cheese, sauerkraut, and creamy dressing into a warm, flaky, family-style dish. Instead of being served between slices of rye bread, the savory filling is wrapped inside buttery crescent dough and baked until golden brown.

This dish is loved because it combines crispy pastry, melted cheese, smoky meat, tangy sauerkraut, and rich dressing in every bite. It is perfect for brunch, family gatherings, game nights, or a quick but impressive dinner.

For the Crescent Bake

  • 2 tubes refrigerated crescent roll dough (about 16 crescent rolls)
  • 450 g corned beef, thinly sliced or chopped
  • 250 g Swiss cheese slices or shredded Swiss cheese
  • 1½ cups sauerkraut, drained well
  • ½ cup Thousand Island dressing (or Russian dressing)
  • 2 tablespoons melted butter
  • 1 teaspoon sesame seeds or caraway seeds (optional)
  • 1 egg (for egg wash, optional)

Optional Additions

  • A little Dijon mustard for extra sharpness
  • Chopped pickles for more tang
  • Black pepper for seasoning
  • Fresh parsley for garnish

Step-by-Step Preparation Method

Step 1: Prepare the Filling Ingredients

Begin by preparing the main components.

Drain the sauerkraut:

Sauerkraut contains a lot of liquid, which can make the pastry soggy. Place it in a strainer and press gently to remove excess moisture.

Prepare the corned beef:

Cut the corned beef into smaller pieces or thin strips so it spreads evenly throughout the bake.

Prepare the cheese:

Slice or shred the Swiss cheese. Shredded cheese melts more evenly, while slices create a stronger cheesy layer.


Step 2: Prepare the Crescent Dough Base

Preheat your oven to:

190°C (375°F)

Lightly grease a baking dish or line it with parchment paper.

Open one tube of crescent dough and separate the triangles. Arrange them in the baking dish, pressing the seams together to create a continuous dough layer.

Make sure there are no large gaps because the filling should stay inside during baking.


Step 3: Add the Reuben Layers

Now build the layers:

First layer: Dressing

Spread half of the Thousand Island dressing over the dough.

This creates a creamy base and prevents the filling from becoming dry.

Second layer: Corned beef

Place the chopped corned beef evenly across the dough.

Avoid placing too much filling in one area because the bake may become difficult to seal.

Third layer: Sauerkraut

Add the drained sauerkraut over the beef.

The sour flavor balances the richness of the meat and cheese.

Fourth layer: Cheese

Cover everything with Swiss cheese.

The cheese will melt and bind the ingredients together.


Step 4: Add the Top Crescent Layer

Take the second tube of crescent dough.

Arrange it over the filling, stretching slightly if necessary. Pinch the edges together with the bottom dough layer to seal the bake.

Brush the top with melted butter or egg wash.

Sprinkle with sesame seeds or caraway seeds if desired.

Caraway seeds are especially good because they recreate the traditional rye bread flavor of a classic Reuben sandwich.
