Cheesy Hash Brown Pie: A Crispy, Golden Comfort Dish with a Rich Cheesy Center
The Cheesy Hash Brown Pie is a creative twist on traditional potato dishes, combining the crispy texture of shredded hash browns with the creamy richness of melted cheese and a flavorful savory filling. It is the kind of dish that feels both familiar and special: a golden potato crust that holds a warm, cheesy interior, making it perfect for breakfast, brunch, lunch, or even a comforting dinner.
Unlike a regular pie made with pastry, this version uses potatoes as the “crust.” The result is a satisfying contrast between the crunchy outside and the soft, cheesy inside. It is affordable, easy to customize, and ideal for anyone who loves potatoes and cheese.
What Makes Cheesy Hash Brown Pie Special?
The magic of this dish comes from three main elements:
1. The Crispy Potato Crust
The hash brown layer creates a naturally gluten-free crust with a golden surface and a delicate crunch. Proper preparation of the potatoes is essential because removing excess moisture allows them to crisp instead of becoming soggy.
2. The Creamy Cheese Filling
A mixture of melted cheese, eggs, and seasonings creates a rich filling that binds everything together. Different cheeses can completely change the character of the pie, from mild and creamy to sharp and flavorful.
3. Endless Customization
This pie can be adapted with vegetables, meat, herbs, or spices. It can become a simple cheese potato pie or a complete meal with chicken, beef, mushrooms, spinach, or bacon.
Ingredients
For the Hash Brown Crust
- 800 g potatoes (about 5–6 medium potatoes)
- 2 tablespoons melted butter
- 1 egg
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder (optional)
For the Cheesy Filling
- 250 g shredded cheese (cheddar, mozzarella, or a combination)
- 3 large eggs
- 150 ml milk or cream
- 1 small onion, finely chopped
- 2 tablespoons chopped fresh parsley or green onion
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
Optional Additions
You can add:
- 150 g cooked minced beef
- 150 g cooked chicken pieces
- 100 g mushrooms
- 100 g spinach
- 100 g cooked bacon
- Chili flakes for heat
Step-by-Step Preparation Method
Step 1: Prepare the Potatoes
Start by washing and peeling the potatoes.
Grate the potatoes using the large side of a grater. Place the grated potatoes into a clean kitchen towel or cheesecloth.
Squeeze firmly to remove as much water as possible.
This step is extremely important. Potatoes contain a lot of moisture, and if the water remains, the crust will steam instead of becoming crispy.
After squeezing, place the potatoes into a bowl.
Add:
- melted butter
- one beaten egg
- salt
- black pepper
- garlic powder
Mix everything well until the potatoes are evenly coated.
Step 2: Shape the Hash Brown Crust
Preheat the oven to 190°C (375°F).
Grease a pie dish or round baking pan with butter or oil.
Press the potato mixture firmly into the bottom and sides of the dish.
Try to create an even thickness. A thinner crust becomes crispier, while a thicker crust gives a softer potato texture.
Bake the crust for:
25–30 minutes
until the edges become golden and slightly crispy.
Remove it from the oven and allow it to cool slightly.
Step 3: Prepare the Cheesy Filling
While the crust is baking, prepare the filling.
In a large bowl, whisk together:
- eggs
- milk or cream
- salt
- black pepper
- paprika
Add:
- shredded cheese
- chopped onion
- parsley or green onion
Mix until everything is evenly combined.
If you are adding meat or vegetables, make sure they are already cooked and not watery. Excess moisture can affect the texture of the pie.
