Cheesy Beef Zucchini Bake is a delicious oven-baked dish that combines tender zucchini, savory seasoned beef, rich tomato flavors, and a generous layer of melted cheese. It is a perfect example of how simple ingredients can be transformed into a satisfying meal that feels both comforting and wholesome.

Unlike traditional casseroles that rely heavily on pasta, rice, or potatoes, this recipe uses zucchini as the main vegetable base, creating a lighter but still hearty dish. The zucchini absorbs the flavors of the beef and sauce while maintaining a pleasant texture, while the cheese topping adds a creamy, golden finish.

This dish works well as a family dinner, meal-prep option, or a low-carbohydrate alternative to classic baked pasta dishes.


Ingredients

For the Beef Filling

  • 500 g ground beef (preferably lean or medium-fat)
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 400 g crushed tomatoes or tomato sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • 1 teaspoon salt (adjust according to taste)
  • A pinch of chili flakes (optional)

For the Zucchini Layers

  • 3–4 medium zucchini (approximately 800 g–1 kg)
  • 1 teaspoon salt
  • 1 tablespoon olive oil

For the Cheese Topping

  • 200 g shredded mozzarella cheese
  • 50 g grated Parmesan cheese
  • 100 g shredded cheddar cheese (optional for stronger flavor)

Step-by-Step Preparation Method

Step 1: Prepare the Zucchini

Begin by washing the zucchini thoroughly and removing both ends.

Slice the zucchini into thin rounds or long strips, around 0.5 cm thick. Thin slices allow the zucchini to cook evenly and absorb the flavors from the beef sauce.

Place the sliced zucchini in a bowl and sprinkle lightly with salt. Let it rest for about 15–20 minutes.

This step removes excess water from the zucchini. Since zucchini contains a high percentage of water, skipping this step can make the bake watery.

After resting, gently press the zucchini slices with a clean kitchen towel or paper towel to remove the moisture.


Step 2: Cook the Beef Mixture

Heat olive oil in a large pan over medium heat.

Add the chopped onion and cook for 3–5 minutes until it becomes soft and slightly translucent.

Add the minced garlic and cook for another 30 seconds. Be careful not to burn the garlic because it can create a bitter taste.

Add the ground beef to the pan. Break it apart using a wooden spoon and cook until the meat changes color and becomes lightly browned.

Once the beef is cooked, add:

  • Tomato paste
  • Crushed tomatoes
  • Oregano
  • Basil
  • Paprika
  • Black pepper
  • Salt
  • Chili flakes (if using)

Mix everything well and allow the sauce to simmer for 15–20 minutes.

The goal is to reduce some liquid and create a thick, flavorful beef sauce. A thick sauce works better in a bake because it prevents excess moisture.


Step 3: Prepare the Zucchini for Baking

While the beef sauce is cooking, lightly grill or pan-sear the zucchini slices.

Heat a non-stick pan or grill pan and brush it lightly with olive oil.

Cook the zucchini slices for approximately 1–2 minutes on each side.

This step is optional, but it improves the final texture by reducing water content and adding a slightly roasted flavor.
