Ingredients
For the Peach Filling:
- 6 cups frozen sliced peaches, slightly thawed
- ½ cup granulated sugar
- 2 tablespoons brown sugar
- 3 tablespoons all-purpose flour or cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon

- ¾ cup all-purpose flour
- ¾ cup brown sugar, packed
- ½ teaspoon cinnamon

- ½ cup cold unsalted butter, cut into small cubes
- ½ cup chopped pecans or walnuts (optional)
Step 1: Prepare the Frozen Peaches
Begin by allowing the frozen peaches to thaw slightly. They do not need to be completely soft; partially thawed peaches are easier to mix while still maintaining their texture during baking.
Place the peaches in a large mixing bowl. If there is excess liquid from thawing, drain some of it to prevent the crisp from becoming watery. However, keep some moisture because it helps create the delicious syrup-like filling that makes peach crisp so comforting.
Step 2: Create the Peach Filling
