Homemade German Chocolate Cake: A Classic Dessert Made from Scratch

German Chocolate Cake is a beloved dessert known for its rich chocolate layers, tender crumb, and signature coconut-pecan frosting. Despite its name, this cake does not actually come from Germany. It was named after Samuel German, an American baker who developed a type of sweet baking chocolate for the Baker’s Chocolate Company in the 19th century. Over time, the recipe evolved into the decadent layered cake that families around the world enjoy today.

Making a homemade German Chocolate Cake from scratch requires a little patience, but the result is a moist, flavorful dessert with deep chocolate notes and a creamy, nutty topping that is far superior to many store-bought versions. This guide will walk you through every step, from preparing the cake batter to creating the traditional coconut-pecan frosting.

Ingredients for Homemade German Chocolate Cake

For the Chocolate Cake Layers

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup hot coffee or hot water

For the Coconut-Pecan Frosting

  • 1 cup evaporated milk
  • 1 cup brown sugar
  • 3 egg yolks
  • ½ cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1⅓ cups sweetened shredded coconut
  • 1 cup chopped pecans

Optional Chocolate Frosting for Decoration

  • ½ cup butter
  • ⅔ cup cocoa powder
  • 3 cups powdered sugar
  • ⅓ cup milk
  • 1 teaspoon vanilla extract

Step 1: Prepare the Cake Pans

Begin by preheating your oven to 350°F (175°C). Grease three 8-inch round cake pans and line the bottoms with parchment paper. This prevents the cake layers from sticking and helps them release easily after baking.

Preparing the pans first ensures that the batter can go directly into the oven once mixed, which helps maintain the cake’s texture.

Step 2: Mix the Dry Ingredients

In a large bowl, combine:

  • Flour
  • Sugar
  • Cocoa powder
  • Baking powder
  • Baking soda
  • Salt

Whisk everything together until the ingredients are evenly distributed.

Mixing the dry ingredients separately helps prevent pockets of cocoa or baking soda from creating an uneven flavor in the finished cake.

Step 3: Combine the Wet Ingredients

In another bowl, whisk together:

  • Eggs
  • Buttermilk
  • Vegetable oil
  • Vanilla extract

Add the wet mixture to the dry ingredients and stir gently until combined.

Finally, slowly pour in the hot coffee or hot water. The batter will become thin, but this is completely normal. The hot liquid helps dissolve the cocoa powder and enhances the chocolate flavor, creating a deeper and richer taste.
