Apple Fritter Bread: A Cozy, Cinnamon-Swirled Loaf Packed with Fresh Apples
Apple Fritter Bread is the kind of homemade treat that makes an ordinary afternoon feel special. It combines the comforting flavors of a classic apple fritter with the simplicity of a quick bread. Tender vanilla bread, juicy cinnamon-coated apples, a buttery brown-sugar swirl, and a simple vanilla glaze come together in every slice.
Unlike traditional yeast-raised apple fritters, this loaf does not require kneading, frying, or waiting for dough to rise. Everything is mixed in a standard loaf pan and baked until golden and fragrant. The result is a soft, cake-like bread with pockets of warm apple and ribbons of cinnamon sweetness throughout.
What Makes Apple Fritter Bread So Good?
The appeal of this bread comes from its layers of texture and flavor. The apples become tender while baking, while cinnamon and brown sugar create a caramel-like flavor around them. The vanilla-flavored batter provides a soft, buttery base, and the glaze adds a delicate sweetness on top.
For the best results, choose apples that hold their shape reasonably well during baking. Granny Smith gives the loaf a pleasant tart contrast, while Honeycrisp or Pink Lady provides a naturally sweeter flavor. You can even combine two varieties for a more interesting apple flavor.

For the Apple Mixture
- 2 medium apples, peeled, cored, and finely diced
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon lemon juice
For the Cinnamon Filling
- 1/3 cup packed light brown sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon all-purpose flour
- 1 tablespoon melted butter
For the Bread
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
For the Glaze
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Equipment You’ll Need
- 9×5-inch loaf pan
- Mixing bowls
- Whisk
- Electric mixer or sturdy wooden spoon
- Rubber spatula
- Knife and cutting board
- Cooling rack
Step 1: Prepare the Apples
Begin by peeling and coring the apples. Cut them into small, evenly sized pieces rather than large chunks. Smaller pieces distribute more easily throughout the loaf and become tender without making the bread difficult to slice.
Place the diced apples in a bowl and toss them with the granulated sugar, cinnamon, and lemon juice.
The lemon juice adds a small amount of acidity that brightens the apple flavor while also helping prevent excessive browning. Set the apples aside while you prepare the rest of the ingredients.
Step 2: Prepare the Cinnamon Filling
In a small bowl, combine the brown sugar, cinnamon, flour, and melted butter.
Stir until the mixture resembles a thick, crumbly paste.
The small amount of flour helps the cinnamon mixture maintain some structure inside the bread instead of completely melting into the batter during baking.
Set the mixture aside.
Step 3: Prepare the Loaf Pan
Preheat your oven to 350°F (175°C).
Grease a 9×5-inch loaf pan thoroughly, paying particular attention to the corners. You can also line the pan with parchment paper, leaving a little overhang on the long sides. This makes the finished loaf much easier to lift out.
Step 4: Mix the Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, and salt.
Mixing the dry ingredients separately ensures that the baking powder and salt are distributed evenly throughout the flour.
Set the bowl aside.
Step 5: Cream the Butter and Sugar
In a large mixing bowl, beat the softened butter and granulated sugar until the mixture becomes lighter and fluffy.
This step helps incorporate air into the batter, contributing to a lighter texture.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
If the mixture looks slightly curdled after adding the eggs, don’t worry. It should come together once the flour is added.
