  • 12 ounces (340 g) penne, rotini, or rigatoni
  • Salt, for the pasta water
  • 1 tablespoon olive oil, if desired

  • 1 pound (450 g) Italian sausage, casings removed if necessary
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 medium zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ¼ teaspoon red pepper flakes, optional
  • ½ teaspoon black pepper
  • Salt, to taste

For the Sauce

  • 1 can (14–15 ounces) crushed tomatoes
  • ½ cup reserved pasta water
  • ½ cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh basil or parsley
  • 1 teaspoon balsamic vinegar, optional

For Serving

  • Extra Parmesan
  • Fresh basil or parsley
  • Crushed red pepper flakes, optional

How to Make Italian Sausage & Vegetable Pasta Skillet

Step 1: Cook the Pasta

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions until al dente.

Before draining, scoop out about ½ cup of pasta water and set it aside.

Drain the pasta and keep it nearby while you prepare the skillet.

Why save the pasta water? The starchy water helps loosen the sauce and allows it to cling beautifully to the pasta instead of becoming watery.


Step 2: Brown the Italian Sausage

Place a large, deep skillet over medium-high heat and add the olive oil.

Add the Italian sausage and break it into small pieces with a wooden spoon or spatula. Cook for approximately 5–7 minutes, stirring occasionally, until browned and cooked through.

The small browned pieces are important because they create flavorful bits that will later mix into the tomato sauce.

If there is a large amount of excess fat in the skillet, carefully drain some of it while leaving enough behind to flavor the vegetables.


Step 3: Add the Onion and Peppers

Add the diced onion, red bell pepper, and yellow bell pepper to the skillet.

Cook for about 4–5 minutes, stirring occasionally, until the vegetables begin to soften.

Don’t rush this stage. Allowing the onions and peppers to cook in the flavorful sausage drippings gives them a much richer taste.


Step 4: Add the Zucchini and Garlic

Add the diced zucchini and minced garlic.

Cook for another 2–3 minutes.

The zucchini should become tender but still have a little bite. Add the garlic toward the end rather than at the beginning so it doesn’t burn.


Step 5: Season Everything

Sprinkle in the Italian seasoning, smoked paprika, black pepper, and red pepper flakes if you’re using them.

Stir thoroughly so the seasonings coat the sausage and vegetables.

Taste the mixture before adding additional salt because Italian sausage and Parmesan can already contain quite a bit of salt.


Step 6: Build the Tomato Sauce

Pour the crushed tomatoes into the skillet.

Add about ¼ cup of the reserved pasta water and stir everything together.

Bring the mixture to a gentle simmer. Reduce the heat to medium-low and cook for approximately 5–7 minutes.

As it simmers, the tomatoes will become richer and the flavors from the sausage, vegetables, and seasonings will blend together.

If the sauce looks too thick, add another splash of pasta water.


Step 7: Add the Cherry Tomatoes

Stir in the halved cherry tomatoes.

Cook for another 2–3 minutes.

They should soften and release some of their juices while still retaining a little shape. This adds a fresh, slightly sweet flavor that balances the savory sausage.
