Chicken Fried Steak with Country Pepper Gravy
Chicken Fried Steak with Country Pepper Gravy is the kind of classic Southern comfort food that turns a few simple ingredients into a deeply satisfying meal. Despite its name, there is no chicken involved—the “chicken fried” part refers to the cooking method, which is similar to frying chicken. Tenderized beef steaks are coated in a seasoned flour mixture, fried until golden and crisp, then covered with a creamy country-style pepper gravy.
The contrast is what makes this dish so special: crunchy, savory breading on the outside, tender beef in the center, and rich pepper gravy spooned generously over the top. Served alongside mashed potatoes, green beans, corn, or warm biscuits, it makes a hearty meal that feels right at home on a family dinner table.
Ingredients
For the Chicken Fried Steak
- 4 cube steaks or tenderized beef steaks
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon cayenne pepper, optional
- 2 large eggs
- 1½ cups buttermilk
- 1 teaspoon hot sauce, optional
- Vegetable oil or another neutral frying oil, for frying
For the Country Pepper Gravy
- 4 tablespoons butter or reserved frying fat
- 4 tablespoons all-purpose flour
- 2½ to 3 cups whole milk
- 1 teaspoon freshly ground black pepper, or more to taste
- ½ teaspoon salt
- ¼ teaspoon garlic powder, optional
- A small pinch of cayenne pepper, optional
Step-by-Step Method
1. Prepare the steaks
If your cube steaks are already tenderized, you can use them as they are. If using another cut of beef, gently pound the steaks with a meat mallet until they are relatively thin and evenly tenderized.
Pat the steaks dry with paper towels. Removing excess moisture helps the flour coating adhere better and encourages a crispier crust.
Season both sides lightly with salt and black pepper.
2. Set up the breading station
Use two wide, shallow dishes.
In the first dish, combine the flour, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper if you’re using it.
In the second dish, whisk together the eggs, buttermilk, and hot sauce.
The seasoned flour provides the savory crust, while the buttermilk mixture helps create the characteristic thick coating.
