Country Apple Fritter Bread: A Cozy, Cinnamon-Glazed Loaf Packed With Apples

There is something wonderfully comforting about a freshly baked loaf filled with tender apples, cinnamon, brown sugar, and a sweet glaze. Country Apple Fritter Bread brings all of those flavors together in a simple loaf that tastes like a cross between homemade apple bread and a classic apple fritter.

The outside develops a lightly golden crust while the center stays soft and moist. Throughout the loaf, you’ll find little pockets of cinnamon-coated apples and ribbons of brown sugar that become deliciously gooey as they bake. A simple vanilla glaze drizzled over the cooled bread adds the finishing touch.

Best of all, this recipe doesn’t require yeast, deep-frying, or complicated techniques. It is an approachable quick bread that can be prepared with everyday baking ingredients.

Why You’ll Love This Apple Fritter Bread

This loaf has several things going for it:

  • Tender and moist texture from the buttery batter and fresh apples
  • Warm cinnamon flavor throughout every layer
  • Caramel-like pockets of brown sugar and cinnamon
  • Fresh apple pieces that soften beautifully during baking
  • Sweet vanilla glaze that gives it an unmistakable apple-fritter character
  • No yeast required, making it much easier than traditional fritters
  • Perfect for breakfast, brunch, an afternoon snack, or dessert

For the best result, choose apples that hold their shape reasonably well during baking while offering a pleasant balance of sweetness and tartness.

Ingredients You’ll Need

For the Apple Filling

  • 2 medium apples, peeled, cored, and diced into small pieces
  • 1 tablespoon all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon lemon juice

The flour helps lightly coat the apples and limits excess moisture from making the surrounding bread soggy.

For the Cinnamon-Sugar Mixture

  • ⅓ cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon all-purpose flour

The small amount of flour helps the mixture form distinct sweet pockets instead of disappearing completely into the batter.

For the Bread

  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup sour cream or plain Greek yogurt
  • 2 tablespoons milk

For the Glaze

  • ¾ cup powdered sugar
  • 1–2 tablespoons milk
  • ½ teaspoon vanilla extract

How to Make Country Apple Fritter Bread

Step 1: Prepare the Apples

Begin by peeling and coring the apples. Cut them into small, bite-sized pieces rather than large chunks.

Place the apples in a bowl and toss them with the lemon juice, sugar, cinnamon, and flour.

Mix gently until the apples are evenly coated.

Set them aside while you prepare the batter.

Tip: Don’t cut the apples too large. Smaller pieces distribute more evenly through the loaf and become tender without making the bread difficult to slice.

Step 2: Prepare the Cinnamon-Sugar Filling

In a small bowl, combine the brown sugar, cinnamon, and flour.

Stir until everything is evenly incorporated.

The brown sugar provides a deeper, almost caramel-like flavor, while cinnamon gives the filling that unmistakable apple-fritter warmth.

Set the mixture aside.

Step 3: Prepare the Loaf Pan

Preheat your oven to 350°F (175°C).

Grease a 9 × 5-inch loaf pan thoroughly with butter or nonstick cooking spray. For easier removal, you can also line the pan with parchment paper, leaving a little overhang on the long sides.

This makes it much easier to lift the finished loaf from the pan after cooling.

Step 4: Cream the Butter and Sugar

Place the softened butter and granulated sugar in a large mixing bowl.

Beat them together for approximately 2–3 minutes, until the mixture becomes lighter and creamy.

This step incorporates air into the butter, helping create a lighter loaf.

Avoid using melted butter here. Softened butter should be cool enough to hold its shape but soft enough to press easily with your finger.

Step 5: Add the Eggs and Vanilla

Add the eggs one at a time, mixing well after each addition.

Then add the vanilla extract.

If the mixture looks slightly curdled at this stage, don’t worry. It should come together once the dry ingredients are incorporated.

Step 6: Combine the Dry Ingredients

In a separate bowl, whisk together:

  • Flour
  • Baking powder
  • Baking soda
  • Salt

Mixing the dry ingredients separately helps distribute the leavening agents throughout the flour before they are added to the wet ingredients.

Step 7: Build the Batter

Add about one-third of the dry mixture to the butter mixture.

Mix gently.

Add half of the sour cream or yogurt and the milk, then continue alternating between the dry ingredients and remaining sour cream.

Mix only until the ingredients are combined.

Don’t overmix. Once the flour disappears, stop mixing. Overworking the batter can make the finished bread dense instead of tender.

The batter should be fairly thick. That’s exactly what you want because it needs to support the apples and cinnamon filling.
