Chocolate Covered Caramel Brownie Cookies
If you love the rich, fudgy texture of brownies, the gooey sweetness of caramel, and the irresistible finish of chocolate, these Chocolate Covered Caramel Brownie Cookies bring all three together in one decadent dessert. They look like elegant bakery-style treats, but the method is surprisingly approachable.
The cookies themselves are soft and intensely chocolatey, with a chewy brownie-like center. A layer of caramel adds a buttery, slightly salty sweetness, while a smooth chocolate coating creates a delicate shell that gives way with every bite.
Why You’ll Love These Cookies
These cookies are more than ordinary chocolate cookies. They combine several textures and flavors:
- Fudgy brownie-like center: Soft, chewy, and rich rather than cakey.
- Buttery caramel filling: Adds a gooey layer of sweetness in the middle.
- Chocolate coating: Creates a smooth, luxurious exterior.
- Deep chocolate flavor: Cocoa and melted chocolate give the cookies their brownie character.
- Bakery-style appearance: A drizzle of chocolate or a sprinkle of flaky salt makes them especially pretty for serving.
They are wonderful for holidays, parties, cookie exchanges, birthdays, or simply when you want something more indulgent than a standard cookie.

- Caramel drizzle
Step-by-Step Method
1. Prepare the Baking Sheets
Begin by lining two baking sheets with parchment paper.
This prevents the cookies from sticking and makes them much easier to remove once baked.
Preheat your oven to 350°F (175°C).
If you have a light-colored baking sheet, it is preferable because dark pans can cause the bottoms of the cookies to brown more quickly.
2. Mix the Dry Ingredients
In a medium bowl, whisk together:
- Flour
- Cocoa powder
- Baking powder
- Salt
Mixing these ingredients separately helps distribute the baking powder and salt evenly throughout the flour.
Set the bowl aside while you prepare the chocolate mixture.
3. Melt the Chocolate and Butter
Place the butter and chopped chocolate in a heatproof bowl.
Melt them gently over a saucepan containing a small amount of barely simmering water, stirring occasionally until smooth.
You can also melt them carefully in the microwave using short intervals, stirring between each one.
Once completely smooth, allow the mixture to cool slightly.
Important: The chocolate mixture should be warm rather than extremely hot before the eggs are added later.
4. Combine the Sugars and Eggs
In a large mixing bowl, whisk together the granulated sugar, brown sugar, and eggs.
Whisk for about 1–2 minutes until the mixture looks smooth and slightly thickened.
Add the vanilla extract and mix again.
The combination of granulated and brown sugar gives these cookies a particularly pleasant texture. Brown sugar contributes moisture and chewiness, while granulated sugar helps create slightly crisp edges.
5. Add the Melted Chocolate
Slowly pour the melted butter-and-chocolate mixture into the egg mixture.
Stir continuously until everything is evenly combined.
The batter should become glossy and deeply chocolate-colored.
6. Add the Dry Ingredients
Gradually add the cocoa-flour mixture to the wet ingredients.
Fold gently with a spatula until no large streaks of flour remain.
Avoid overmixing. Once the flour has disappeared, stop stirring.
Finally, fold in the chocolate chips.
At this point, the dough will be soft and sticky. That is completely normal.
7. Chill the Cookie Dough
Cover the bowl and refrigerate the dough for approximately 30–45 minutes.
This step is important because chilled brownie-cookie dough is much easier to handle.
It also helps prevent the cookies from spreading too aggressively in the oven.
If your kitchen is particularly warm, you may need to chill the dough slightly longer.
Preparing the Caramel Center
8. Make the Caramel Filling
If using soft caramel candies, place them in a small saucepan with the heavy cream.
Heat over low heat, stirring frequently, until the caramels melt into a smooth mixture.
Stir in the salt.
Allow the caramel to cool until it is thick enough to handle.
Another easy option is to use individually wrapped soft caramel candies. If they are small enough, they can be placed directly inside the cookie dough without melting them first.
