Baked Potato Halves with Butter and Chives

Few side dishes are as simple and satisfying as a perfectly baked potato. These Baked Potato Halves with Butter and Chives take that classic comfort food and give it a more inviting presentation by cutting the potatoes in half before baking. The result is a tender, fluffy center surrounded by beautifully roasted edges, finished with melted butter and fresh chives.

They are inexpensive, easy to prepare, and versatile enough to accompany everything from roasted chicken and grilled vegetables to soups and salads. Best of all, they require only a handful of everyday ingredients.

Why You’ll Love This Recipe

Cutting the potatoes in half before baking gives them more surface area for seasoning and browning. The exposed potato develops lightly crisp, golden edges while the inside stays soft and fluffy.

The butter adds richness without overpowering the natural flavor of the potatoes, while fresh chives provide a mild onion-like freshness that makes the finished dish taste brighter.

This recipe is also easy to customize. You can add garlic, black pepper, grated cheese, or other herbs depending on what you have available.

Ingredients

For about 4 servings, you’ll need:

  • 4 medium russet or Yukon Gold potatoes
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon olive oil
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons fresh chives, finely chopped
  • Optional: 1 small garlic clove, finely minced
  • Optional: grated Parmesan or shredded cheddar for topping

Choosing the Best Potatoes

Russet potatoes are an excellent choice if you prefer a light, fluffy interior. Their thicker skins also become pleasantly crisp in the oven.

Yukon Gold potatoes are another great option. They have a naturally buttery texture and a slightly creamy center, making them especially good for this recipe.

Choose potatoes that are firm and relatively similar in size so that they cook evenly.

Step 1: Prepare the Potatoes

Begin by preheating your oven to 425°F (220°C).

Wash the potatoes thoroughly under cool running water, scrubbing the skins to remove any dirt. Pat them completely dry with a clean kitchen towel.

There is no need to peel the potatoes. Keeping the skin on helps protect the potato during baking and gives the finished halves a delicious roasted exterior.

Place each potato on a cutting board and carefully slice it lengthwise in half.

Step 2: Prepare the Butter Mixture

Melt the butter in a small bowl.

Add the olive oil, salt, black pepper, and minced garlic if you are using it. Stir everything together until well combined.

The combination of butter and olive oil gives the potatoes both richness and a little extra help with browning.

Reserve a small amount of the butter mixture for brushing the potatoes after they come out of the oven.

Step 3: Season the Potato Halves

Line a large baking sheet with parchment paper or lightly grease it.

Place the potato halves on the baking sheet with the cut sides facing upward.

Brush the exposed potato generously with the butter mixture, making sure the seasoning reaches the edges.

For even browning, try not to overcrowd the baking sheet. Leave a little space between each potato half so hot air can circulate around them.

Step 4: Bake Until Golden and Tender

Transfer the baking sheet to the preheated oven.

Bake the potatoes for approximately 30–40 minutes, depending on their size.

After about 25 minutes, begin checking their progress. The tops should look golden around the edges, and the potatoes should feel tender when pierced with a fork.

If the potatoes are large, they may need a few additional minutes.

For especially crisp edges, you can place them under the broiler for the final 1–2 minutes. Watch them closely during this stage because they can brown quickly.
