There is something wonderfully comforting about turning simple cooked rice into a golden, crispy snack. These Cheesy Garlic Parmesan Rice Balls take leftover rice and transform it into bite-sized treats with a crunchy exterior, a savory garlic-and-Parmesan flavor, and a warm, cheesy center.

They are easy enough for a casual afternoon snack but delicious enough to serve as an appetizer or side dish. The best part is that you don’t need complicated ingredients. With cooked rice, cheese, garlic, a few seasonings, and a simple coating, you can create something that tastes far more special than the ingredients suggest.

For approximately 10–12 rice balls, you’ll need:

For the Rice Mixture

  • 2 cups cooked white rice, preferably chilled
  • ½ cup finely grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, finely minced
  • 2 tablespoons chopped fresh parsley
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt, or to taste
  • ½ cup shredded mozzarella cheese

For the Coating

  • ¾ cup breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ¼ teaspoon Italian seasoning
  • A small pinch of salt

For Cooking

  • 2–3 tablespoons olive oil, if pan-frying

You can also bake or air-fry the rice balls if you prefer a lighter cooking method.

Step 1: Prepare the Rice

Start with cold, cooked rice. If you’re using freshly cooked rice, spread it on a plate or baking sheet and allow it to cool completely before beginning.

Cold rice is easier to handle because the grains have firmed up. This helps the rice balls maintain their shape instead of becoming soft and difficult to form.

If your leftover rice contains large clumps, gently break them apart with a fork.

Step 2: Make the Garlic-Parmesan Mixture

Place the chilled rice in a large mixing bowl.

Add the grated Parmesan, minced garlic, chopped parsley, Italian seasoning, black pepper, and salt.

Mix everything gently until the seasonings and cheese are distributed throughout the rice.

The mixture should already smell wonderfully savory and garlicky.

Step 3: Add the Egg

Crack the egg into the rice mixture.

Stir thoroughly until the egg is evenly incorporated. The egg acts as a binder, helping the individual rice grains stick together when you shape the mixture.

At this stage, the mixture should be moist enough to hold together when pressed.

If it feels unusually loose, add a tablespoon or two of breadcrumbs and mix again.

Step 4: Add the Mozzarella

Fold the shredded mozzarella into the rice mixture.

You can either mix it throughout the rice or reserve some mozzarella for the center of each ball.

For the best cheesy effect, I recommend reserving small portions of mozzarella for the middle.

This creates a delicious melted center once the rice balls are cooked.

Step 5: Shape the Rice Balls

Scoop approximately 2 tablespoons of the rice mixture into your hand.

Press it firmly together and flatten it slightly.

Place a small amount of mozzarella in the center.

Carefully fold the rice around the cheese, completely enclosing it.

Gently roll the mixture between your palms until you have a compact ball.

Try not to make the rice balls too large. Smaller balls are easier to shape and cook more evenly.

Continue until all of the rice mixture has been used.

Step 6: Prepare the Crispy Coating

In a shallow bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, and a small pinch of salt.

Mix well.

The Parmesan in the coating adds extra flavor and helps the outside develop a beautifully savory crust.

Step 7: Coat Each Rice Ball

Roll each rice ball gently through the breadcrumb mixture.

Turn it several times so that the entire surface is coated.

Lightly press the breadcrumbs against the outside if necessary.

Once coated, place the rice balls on a clean plate or tray.

If the balls feel soft, refrigerate them for about 15–20 minutes before cooking. This short chilling period helps them firm up and makes them less likely to break apart.
