Cream Cheese Stuffed Cinnamon Roll Bake

There is something especially comforting about the combination of warm cinnamon, buttery dough, and creamy cheese. This Cream Cheese Stuffed Cinnamon Roll Bake brings all three together in one irresistibly soft and gooey breakfast casserole.

Instead of preparing individual cinnamon rolls and carefully shaping each one, this recipe turns the classic treat into an easy baked dish. Pieces of cinnamon roll dough are layered around a rich cream cheese filling, then baked until golden on top while remaining tender and soft inside. A simple sweet glaze finishes everything beautifully.

It is an excellent choice for a weekend breakfast, holiday brunch, family gathering, or whenever you want something that feels homemade without spending hours in the kitchen.

Why You’ll Love This Cinnamon Roll Bake

This recipe has everything people love about cinnamon rolls, but in a convenient casserole-style format.

The outside becomes lightly golden and caramelized while the center stays soft. Hidden between the layers is a smooth cream cheese mixture that adds a pleasant tanginess and richness, balancing the sweetness of the cinnamon and sugar.

Another advantage is that much of the preparation can be done ahead of time. Once assembled, the dish can be refrigerated until you’re ready to bake it, making it particularly convenient when serving breakfast to a group.

Ingredients

For the Cinnamon Roll Bake

  • 2 cans refrigerated cinnamon roll dough, preferably with icing included
  • 8 ounces cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/4 cup sour cream or plain Greek yogurt
  • 2 tablespoons melted butter
  • 1 teaspoon ground cinnamon
  • 2 tablespoons brown sugar

For the Finishing Glaze

  • The icing included with the cinnamon roll dough
  • 1 to 2 tablespoons milk, if needed
  • 1/2 teaspoon vanilla extract, optional

You can also add a small pinch of cinnamon to the glaze for an extra warm flavor.

Step 1: Prepare the Oven and Baking Dish

Begin by preheating your oven to 350°F (175°C).

Lightly grease a 9×13-inch baking dish with butter or nonstick cooking spray. Greasing the dish is important because the cream cheese filling and cinnamon-sugar mixture can become sticky as they bake.

Set the prepared dish aside while you make the filling.

Step 2: Make the Cream Cheese Filling

Place the softened cream cheese in a medium mixing bowl.

Add the granulated sugar, vanilla extract, egg, and sour cream. Beat everything together until the mixture becomes smooth and creamy.

The cream cheese should be softened before mixing. If it is too cold, the filling may remain lumpy rather than becoming silky and spreadable.

The finished filling should have a thick but smooth consistency.

Step 3: Prepare the Cinnamon Roll Dough

Open the refrigerated cinnamon roll dough and separate the rolls.

Cut each cinnamon roll into several bite-sized pieces. You don’t need to make every piece exactly the same size; a little variation is perfectly fine.

Place the pieces in a large bowl and gently toss them with the melted butter.

In a small bowl, combine the brown sugar and ground cinnamon. Sprinkle this mixture over the dough pieces and gently toss until they are lightly coated.

This step gives the bake an additional layer of cinnamon flavor and helps create those delicious caramelized spots on the edges.

Step 4: Create the First Layer

Arrange approximately half of the cinnamon roll pieces across the bottom of the prepared baking dish.

Try to spread them into an even layer, but don’t worry if there are small spaces between pieces. The dough will expand as it bakes.

The first layer creates the base of the casserole and helps support the creamy filling.

Step 5: Add the Cream Cheese Center

Carefully spoon the cream cheese mixture over the first layer of cinnamon roll pieces.

Use the back of a spoon or a small spatula to gently spread the filling across the surface.

Don’t worry if the cream cheese doesn’t completely reach every corner. Leave a little room around the edges so that it remains contained within the layers as the bake cooks.
