Step-by-Step Method

Step 1: Prepare the Graham Cracker Crust

Start by making the crust because it needs time to firm up.

Place the graham cracker crumbs in a medium bowl. Add the granulated sugar and a small pinch of salt, then stir until everything is evenly distributed.

Pour in the melted butter and mix thoroughly. The mixture should resemble damp sand and should hold together when pressed between your fingers.

Transfer the mixture to a 9-inch pie dish.

Using the bottom of a measuring cup or the back of a spoon, firmly press the crumbs across the bottom of the dish. Work the mixture slightly up the sides as well, creating an even crust.

The most important part here is pressing firmly. A loosely packed crust is more likely to crumble when the pie is sliced.

Place the crust in the refrigerator for at least 30 minutes while you prepare the filling.


Step 2: Combine the Custard Ingredients

In a medium saucepan, whisk together the sugar, cornstarch, and salt.

In a separate bowl, whisk the egg yolks with the milk and heavy cream until smooth.

Slowly pour the milk mixture into the saucepan while whisking constantly. This helps distribute the cornstarch evenly and prevents lumps from forming.

At this stage, the mixture should still be completely smooth and liquid.


Step 3: Cook the Vanilla Custard

Place the saucepan over medium-low to medium heat.

Whisk continuously as the mixture warms. Do not walk away from the saucepan because the bottom can thicken faster than the rest of the mixture.

After several minutes, the custard will gradually become thicker. Once it reaches a gentle simmer, continue cooking and whisking for approximately 1–2 minutes, or until it has a thick pudding-like consistency.

The filling should be thick enough to coat the back of a spoon.

Avoid cooking it aggressively. Gentle, consistent heat gives you a smoother custard.
