Choosing the Right Potatoes
Russet potatoes are an excellent choice when you want a fluffy interior and crisp edges. Yukon Gold potatoes are another great option and produce a slightly creamier center.
Try to choose potatoes that are similar in size so that the slices cook at approximately the same rate.
Step 1: Prepare the Potatoes
Begin by preheating your oven to 425°F (220°C).
Wash and scrub the potatoes thoroughly. You can peel them if you prefer, but leaving the skin on gives the slices extra texture and flavor.
Pat the potatoes completely dry with a clean kitchen towel. Removing excess moisture is important because dry potatoes brown much better in the oven.
Slice the potatoes into rounds approximately ¼ to ½ inch thick. Try to keep the slices relatively uniform so they finish cooking at the same time.
Step 2: Make the Parmesan Seasoning
In a small bowl, combine the finely grated Parmesan, garlic powder, Italian seasoning, paprika, black pepper, and salt.
Mix everything thoroughly so the seasonings are evenly distributed throughout the cheese.
For the crispiest crust, use finely grated Parmesan rather than large shreds. The smaller pieces spread more evenly across the baking surface and develop a beautifully golden texture.
Step 3: Season the Potato Slices
Place the potato slices in a large bowl. Drizzle them with the olive oil and toss gently until every slice has a light coating.
You don’t need to use a large amount of oil. Just enough to lightly coat the potatoes will help them brown while allowing the Parmesan mixture to adhere.
Step 4: Prepare the Baking Sheet
Line a large baking sheet with parchment paper.
Sprinkle small amounts of the Parmesan mixture onto the sheet where each potato slice will sit. This little trick helps create a delicious Parmesan crust underneath the potatoes.
Arrange the potato slices in a single layer over the Parmesan mixture. Leave a little space between each slice rather than overlapping them.
Sprinkle the remaining Parmesan mixture over the tops.
Press the seasoning gently onto the potato slices with your fingers or the back of a spoon. This helps the cheese stay in place during baking.
Step 5: Bake Until Golden and Crisp
Place the baking sheet in the preheated oven and bake for approximately 25–35 minutes, depending on the thickness of the slices and the type of potato used.
After about 20 minutes, check the potatoes. The bottoms should be developing a deep golden Parmesan crust, while the potatoes themselves should be becoming tender.
If necessary, continue baking until the edges are crisp and the centers can be easily pierced with a fork.
For an especially golden top, you can switch the oven to broil for the final 1–2 minutes. Watch them carefully during this stage because Parmesan can brown quickly.
