Crème Brûlée Custard Cake

There are desserts that are delicious, and then there are desserts that feel like two favorites have been combined into something completely irresistible. Crème Brûlée Custard Cake is exactly that kind of treat.

Imagine a soft, delicate cake surrounding a rich vanilla custard, finished with a thin layer of sugar that is caramelized until it becomes beautifully crisp. The contrast is what makes this dessert so special: the outside has a satisfying crackle, while the inside is creamy, smooth, and wonderfully tender.

This cake is elegant enough for a dinner party but simple enough to make for a weekend dessert. The key is giving the custard enough time to set properly and caramelizing the sugar just before serving.

Why You’ll Love This Cake

This dessert combines several textures in one bite. The cake is light and tender, the custard is silky and rich, and the brûléed sugar adds a crisp caramelized finish.

A few things make this recipe especially appealing:

  • Creamy vanilla custard: The center has the luxurious texture associated with classic crème brûlée.
  • Soft cake layer: A delicate cake provides just enough structure without overpowering the custard.
  • Crispy caramel topping: The final layer of caramelized sugar creates the signature brûlée crunch.
  • Elegant presentation: The golden topping makes the cake look much more complicated than it actually is.
  • Make-ahead friendly: The cake can be prepared and chilled ahead of time, with the sugar topping added shortly before serving.

Ingredients

For the Cake

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup whole milk

For the Custard

  • 2 cups whole milk
  • 1 cup heavy cream
  • 4 large egg yolks
  • ½ cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt

For the Brûlée Topping

  • 3–4 tablespoons granulated sugar

Equipment

You will need:

  • A 9-inch round springform pan or cake pan
  • Mixing bowls
  • Whisk
  • Electric mixer
  • Saucepan
  • Fine-mesh sieve
  • Spatula
  • Baking sheet
  • Kitchen torch

If you don’t have a kitchen torch, the sugar topping can also be caramelized briefly under a very hot broiler. Watch it carefully because the sugar can go from golden to burnt quickly.

Step-by-Step Method

Step 1: Prepare the Pan

Begin by preheating your oven to 350°F (175°C).

Grease a 9-inch round pan and line the bottom with parchment paper. If you’re using a springform pan, make sure it closes securely.

Set the pan aside while you prepare the cake batter.

Step 2: Mix the Dry Ingredients

In a medium bowl, whisk together the flour, baking powder, and salt.

Mixing these ingredients separately helps distribute the baking powder evenly throughout the flour, which gives the cake a more consistent texture.

Set the bowl aside.

Step 3: Cream the Butter and Sugar

Place the softened butter and granulated sugar in a large mixing bowl.

Beat them together for about 2–3 minutes, until the mixture becomes lighter and fluffy.

This step incorporates air into the butter, helping create a tender cake.

Step 4: Add the Eggs and Vanilla

Add the eggs one at a time, mixing well after each addition.

Add the vanilla extract and mix until combined.

If the mixture looks slightly uneven at this point, don’t worry. It will come together once the dry ingredients and milk are added.

Step 5: Finish the Cake Batter

Add about half of the dry ingredients to the butter mixture and mix gently.

Pour in the milk and mix briefly.

Add the remaining dry ingredients and stir just until no visible streaks of flour remain.

Avoid overmixing because too much mixing can make the finished cake dense.

Step 6: Bake the Cake

Spread the batter evenly into the prepared pan.

Bake for approximately 18–22 minutes, or until the center is set and a toothpick inserted into the cake comes out clean or with a few moist crumbs.

Remove the cake from the oven and allow it to cool for about 10 minutes.

The cake doesn’t need to be completely cold at this stage.

Step 7: Prepare the Custard

While the cake is baking, prepare the creamy custard.

Pour the milk and heavy cream into a medium saucepan. Heat the mixture over medium heat until it becomes hot and steamy, but don’t allow it to boil.

Meanwhile, whisk the egg yolks, sugar, cornstarch, and salt together in a separate bowl.

The mixture should become smooth and slightly lighter in color.

Step 8: Temper the Eggs

This is one of the most important steps.

Slowly pour a small amount of the hot milk mixture into the egg-yolk mixture while whisking constantly.

Continue adding the hot milk gradually while whisking.

This process gently raises the temperature of the eggs instead of exposing them to the hot liquid all at once.

Once the mixtures are combined, pour everything back into the saucepan.
