Taco Bell Mexican Pizza: A Complete Guide to Making This Iconic Fast-Food Favorite at Home

The Taco Bell Mexican Pizza is one of the most recognizable creations from the famous fast-food chain. Combining the flavors of a crispy tortilla, seasoned beef, refried beans, melted cheese, flavorful sauce, and fresh tomatoes, this dish creates a unique combination that feels like a mix between a taco and a pizza. Although it is called a “Mexican Pizza,” it is not a traditional Mexican dish; instead, it is an American fast-food invention inspired by Mexican flavors.

Loved for its crunchy texture and comforting layers, the Mexican Pizza became a fan favorite after its introduction and gained such a strong following that customers celebrated its return after it was removed from menus. Taco Bell describes the modern version as seasoned beef and refried beans layered between two crispy flour tortilla shells, topped with Mexican Pizza sauce, a three-cheese blend, and diced tomatoes.

Making a homemade version allows you to enjoy the same delicious flavors while adjusting the ingredients to your personal taste. This recipe recreates the famous layered structure while adding homemade touches for extra flavor.

For the Mexican Pizza Sauce

  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • A pinch of sugar
  • A small pinch of salt

For the Toppings

  • 1 cup shredded Mexican cheese blend
  • ½ cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • Sour cream (optional)
  • Green onions or jalapeños (optional)

Step-by-Step Instructions

Step 1: Prepare the Crispy Tortilla Shells

The signature feature of the Mexican Pizza is the crunchy tortilla layers. They should be firm enough to hold the filling but not as hard as a traditional tostada.

  1. Preheat your oven to 375°F (190°C).
  2. Lightly brush both sides of each tortilla with vegetable oil.
  3. Place the tortillas on a baking sheet.
  4. Bake for about 8–10 minutes, flipping halfway through.
  5. Remove them once they become golden and crispy.

For an even crunchier result, you can lightly fry the tortillas in hot oil for about 30–60 seconds per side, then drain them on paper towels.

Step 2: Cook the Seasoned Beef

The beef layer gives the Mexican Pizza its classic taco-inspired flavor.

  1. Heat a large skillet over medium heat.
  2. Add the ground beef and cook until browned.
  3. Drain excess grease if necessary.
  4. Add chili powder, paprika, cumin, garlic powder, onion powder, salt, and pepper.
  5. Pour in the water and stir well.
  6. Simmer for 5–7 minutes until the seasoning coats the meat and the mixture becomes flavorful.

The goal is a moist but not watery beef filling that spreads easily over the tortilla.
