  • 1 yellow or orange bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 can (14–15 ounces) diced tomatoes
  • 1 cup tomato sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt, plus more to taste
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes, optional
  • ½ cup chicken broth or reserved pasta water
  • ½ cup grated Parmesan cheese, optional
  • 2 tablespoons chopped fresh parsley
  • Additional Parmesan for serving

Choosing the Sausage

Both mild and hot Italian sausage work well. Mild sausage gives the dish a more family-friendly flavor, while hot Italian sausage adds a pleasant kick.

You can use links with the casings removed or bulk Italian sausage. If using links, remove the casings before cooking so the sausage can easily break apart in the skillet.

Step 1: Prepare the Vegetables

Start by slicing the onion and bell peppers into thin, relatively even strips.

Try to keep the peppers similar in size so they cook at approximately the same rate. Mince the garlic and set it aside separately because it will be added later.

Having everything prepared before you start cooking makes the process much easier, especially once the sausage and vegetables are in the skillet.

Step 2: Brown the Italian Sausage

Heat a large, deep skillet or Dutch oven over medium-high heat. Add the Italian sausage and cook for approximately 6–8 minutes, breaking it apart with a wooden spoon as it cooks.

Continue cooking until the sausage is browned and cooked through.

Don’t worry if small browned pieces remain on the bottom of the pan. Those bits contain a lot of flavor and will become part of the sauce.

If there is an excessive amount of rendered fat, carefully drain some of it while leaving enough behind to cook the vegetables.

Step 3: Cook the Peppers and Onions

Add the olive oil if the skillet needs additional fat, followed by the sliced onion and bell peppers.

Cook for about 6–8 minutes, stirring occasionally. The vegetables should begin to soften while still retaining a little texture.

As they cook, scrape the bottom of the pan with your spoon to loosen some of the browned sausage pieces.

Add the minced garlic during the final minute or two of cooking the vegetables. Stir continuously enough to prevent the garlic from burning.

You should begin to smell the garlic and the sweetness of the peppers at this point.

Step 4: Build the Sauce

Return the browned sausage to the skillet if you removed it.

Add the diced tomatoes, tomato sauce, Italian seasoning, oregano, smoked paprika, black pepper, and red pepper flakes if you’re using them.

Pour in about ½ cup of chicken broth or reserved pasta water.

Stir everything together until the sausage and vegetables are evenly coated.

Reduce the heat to medium-low and allow the mixture to simmer for approximately 8–10 minutes.

This short simmer is important because it gives the tomato sauce time to absorb the flavors from the sausage, onions, peppers, and seasonings.

Taste the sauce and adjust the salt or seasonings if necessary.
